Peanut Butter Chocolate Chip Cookies
Yields 6 cookies (you don't want too many of these lying around!!)
Ingredients
1/4 Cup Atkins Bake Mix
1/4 Cup Granular Splenda/Granular Sugar Substitute
Dash Salt
5 Tablespoon + 1 Teaspoon Peanut Butter (natural or sugar free)
1/2 Cup Heaving Whipping Cream
2/3 of One Egg (estimate)
1/3 Teaspoon Vanilla Extract (estimate)
1 Atkins Endulge Chocolate Bar (or equivalent)
1. Preheat Oven to 375 F.
2. Whisk dry ingredients (Bake Mix, Sugar Substitute, salt) together in a bowl.
3. In another slightly larger bowl, mix peanut butter, cream, egg, vanilla completely until smooth and creamy.
4. Add little by little of the dry ingredients and mix into the creamy mixture
5. Cut up [with kitchen scissors, etc] the Atkins Endulge Chocolate Bar into chunks of your choice of size and mix into the batter.
6. Drop dough by the tablespoonful onto a baking sheet.
7. Bake 8-10 minutes until slightly browned.
8. Let cookies sit on baking sheet and cool for a couple of minutes (they are fragile and can break if too hot).
9. ENJOY!!!
About 2.5-3ish net carbs per serving.
