  • Safe Cheesecake

    8oz cream cheese (can use (2) 8oz, but you can eat more when you use 1 8oz, b/c less carbs)
    2 eggs
    1tsp vanilla extract
    4 splendas

    Total carbs: 11

    beat all ingredients together for about 4 minutes. Spread in baking dish (preferbly cheesecake size or smaller), but first grease pan down w/ butter (or pam) and a little splenda. Then pour and spread mixed ingredients and sprinkle a little splenda on top. Bake on 350 for 35-40 minutes. Then top w/ whip cream

    It is great!!!! Induction people: you have to make sure you stay w/ in your 3-4 oz cheese intake. So if I have not had any cheese for the day I would eat half of this.

    What kind of whip cream do you use on top of this recipe??

      Ready whip, i think is what it is called. But, I'll check when I go home tonight and let you know tomorrow.

        Just to be an Anal Atkid here, remember that Redi-Whip contains sugar. It is better to whip your own with heavy whipping cream, Splenda & vanilla. (Or DaVinci's Sugarfree Vanilla Syrup, to save on carbs.)

          The stuff I get says 0 carb 0 sugar. I'll re check tonight. But, my mother has been on this diet since Dec. 26th and has already lost 25 lbs and she uses this stuff. And I am losing as well. In the past we both used it and did not effect us. But, like people have mentioned everything effects us differently. I'll make sure I am talking about the same stuff when I get home tonight. I guess to be safe, people should make the whip cream mel is talking about. Thanks for the homeade recipe for whip cream.

            Oh, I use the pre-made stuff sometimes too, just to save time. You're right, everyone is different.

                I get mine at Super Walmart, over in the coffee section. If you have a Trader Joe's near you, I think they sell it there too. Or check your local grocery stores. You can always bug the manager to special order for you.

                    I haven't really counted servings. I just know that the count of carbs in the whole thing is 11-12. When I eat eat I cut in in half or in 1/4ths. I usually split it w/ my mother and only eat it maybe once a week, so usuallly we'll just cut down the middle, she takes one half and I take the other (about 5-6 carbs each half and there ya go). I guess how much you eat depends on how many carbs you have had that day or how much cheese you have had

                        I actually made up a similar recipe before I read this post.....just as an FYI....I added 1/4 c. flax seed meal (kind of as a binding agent and for fiber) and 1 heaping tbsp. sour cream for richness and (using only 1 pkg. cream cheese) it made 9 "cupcake cups".........but be sure and spray the paper cups or they stick a bit. The cups make them easy to grab to take with you!
