  • Jicama Bread - Induction Friendly

    How it Looks when coming out of the oven:

    Ready to eat: (This is two servings on plate.)


    A closeup so you can see the jicama on top:


    This is a really moist dense bread.

    Jicama Bread
    (Serves 8 )

    Preheat oven to 350 degrees F. Butter bread pan.

    1/4 large jicama shredded.
    1 TBSP Butter
    1 tsp. cinnamon
    1/8 cup water

    Cook over med heat til jicama sofens slightly and sauce has thickened. Jicama really never gets really truly soft.

    Take 1/2 of mixture and put into the bottom of the bread pan.

    Mix in seperate bowl:

    3 eggs
    1/2 tsp baking soda
    1/2 tsp baking powder
    1/4 cup oil + 2 TBSP oil
    1/4 cup sugar free syrup (I used almond)
    1 TBSP Vanilla
    1 cup golden flax meal
    Remaining 1/2 of cooked jicama

    Mix and set aside for 5 min. Mixture will thicken.

    Pour on top of jicama mixture in bread pan.

    Bake for approximately 40 - 50 minutes or until toothpick come out clean.

    Cool and turn out so jicama mixture is on top. Put frosting on.

    Frosting (will only be a thin layer)

    1/2 ounce cream cheese softened.
    1/2 tsp sugar free syrup (I used almond)
    1/2 tsp heavy cream.

    Spread over top of cooled bread. Sprinkle top lightly with cinnamon.

        Thank you Shelly! I wasn't quite sure where to stick this.. here.. other..snacks. I went with here as it has kind of a sweet topping. The whole thing isn't terribly sweet. But I liked it.

          Very interesting. Did you comeup with it yourself? Like based on an idea of zucchini bread?

            how many servings did you get out of this? Flax has a limit during Induction.

              As per above. I got 8 servings out of this. I used one cup of flax in the recipe. As per my calculations that would be equivalent to 16 TBSP. Which would equate to 2 TBSP per serving. Which I take it is over the 1TBSP recommended by DANDR. I guess I should only eat 1/2 of a serving a day to not go over the recommended amount. If one should need the flax that is.

              I did remove the Induction friendly from my title here but it seems that it still shows in the listing. If you could correct this I would most appreciate it.

                That looks great, I'll have to try it.

                I've been making a mistake... I've been having 2Tbsp servings a day in things. Oops. Oh well, I'm moving up to the veggie run soon, I guess it won't hurt me.
