This is a really moist dense bread.
Jicama Bread
(Serves 8 )
Preheat oven to 350 degrees F. Butter bread pan.
1/4 large jicama shredded.
1 TBSP Butter
1 tsp. cinnamon
1/8 cup water
Cook over med heat til jicama sofens slightly and sauce has thickened. Jicama really never gets really truly soft.
Take 1/2 of mixture and put into the bottom of the bread pan.
Mix in seperate bowl:
3 eggs
1/2 tsp baking soda
1/2 tsp baking powder
1/4 cup oil + 2 TBSP oil
1/4 cup sugar free syrup (I used almond)
1 TBSP Vanilla
1 cup golden flax meal
Remaining 1/2 of cooked jicama
Mix and set aside for 5 min. Mixture will thicken.
Pour on top of jicama mixture in bread pan.
Bake for approximately 40 - 50 minutes or until toothpick come out clean.
Cool and turn out so jicama mixture is on top. Put frosting on.
Frosting (will only be a thin layer)
1/2 ounce cream cheese softened.
1/2 tsp sugar free syrup (I used almond)
1/2 tsp heavy cream.
Spread over top of cooled bread. Sprinkle top lightly with cinnamon.

. I went with here as it has kind of a sweet topping. The whole thing isn't terribly sweet. But I liked it.
