Frosted Pumpkin Bars
3/4 cup almond flour
2 teaspoons oat flour
2/3 cup canned pumpkin
2 large eggs
1/4 cup vegetable oil
2 teaspoons Brown Sugar Twin
3/4 cup Splenda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 T pumpkin pie spice (or to taste)
1 teaspoon vanilla extract
1/2 cup chopped pecans
In a small mixing bowl, beat eggs with brown sugar twin; add vanilla, vegetable oil; pumpkin and mix well; set aside.
Sift almond flour; oat flour; baking powder; salt, splenda; and pumpkin spice into a large mixing bowl; mix well.
Slowly add pumpkin mixture into dry ingredients; mix well; add chopped pecans, and again mix well, to distribute evenly.
Pour into buttered 12 X 8 glass cake pan.
Bake in preheated oven at 350-degrees for 25-30 minutes; cool completely before cutting into squares and frosting.
Note: You need to watch more closely, if using metal baking pans and adjust time, as needed.
Makes 10 servings.
CREAM CHEESE FROSTING:
Mix together, softened to room temperature, 8 oz pkg cream cheese; 2 tsps vanilla extract; 4 Splenda packets; 1/8 tsp of cinnamon.
I have no idea what the net carbs per serving would be. Maybe someone will be kind enough to run it through Fitday for me. There was no other information here on the recipe card.
