    Easy and wonderful Upside-down Chocolate Cheesecake

    1 pkg chocolate fudge sugar free pudding mix
    1 cup heavy cream
    3/4 cup water
    4 oz cream cheese
    1 c almonds, coarsly ground

    Heavy whipping cream, for topping
    Shaved pieces of a low-carb chocolate bar, for topping

    Beat all ingredients together except almonds. This will take awhile to
    completely beat the lumps out of the cream cheese, but the time spent is
    worth it because all of the beating will leave you with a wonderfully silky
    texture and lots of air whipped in will help it to not taste too terribly
    heavy. Spray a pan with Pam, spread cheesecake mixture in, and sprinkle
    ground almonds on top to cover. To serve, garnish each piece with whipped
    cream and a shaving or two of a low-carb chocolate bar. Sorry, I don't have
    the carb counts for this... Should make 6-8 servings, depending on how you
    slice it.
