I can't recall where I lifted this recipe from, but it was pretty good. I made the following additions -- Sprinkled ground pecans and cinnamon on top before baking -- then when cooled, drizzled some thin cream cheese icing on it.
Blueberry cake
1/2 c. Carbquick
1/4 c. (more or less) Splenda
4 oz sour cream
2 T. frozen blueberries
1 T. melted butter
Just mix it all up and bake in an oven-proof bowl. I stick it in at 350 for about 20 mins or so, until it's golden brown.
The user who posted it, said this was two servings, but I cut it into four. Carbs would depend on what else you put in it!
