  • Cheese Cake Muffins

    I made a new recipe- Hopefully it will work out all right.

    I am baking these right now- the batter tastes great.

    4 large eggs
    12 oz soft cream cheese
    1/2 cup sour cream
    1 tsp vanilla
    1/2 cup sugar free caramel syrup
    1/2 splenda

    Using a mixer- mix the cream cheese- add in eggs and then the sour cream- scrape the sides of the bowl while mixing (I had the mixer on high). I added the vanilla, sugar free carame (you could use what ever flavor you like), and splenda.

    Spray Pam on silicone muffin pans. I used 2 sets of six and filled them about 3/4 full.

    Baking in the oven at 350 for 30 minuyes to start.

      They turned out great I took a batch to one of my girlf friends who is also low carbing (not Atkins) and she thought they were great.

      They came out of the oven huge- like a real muffin but then the air diffused and they sunk to more of a biscuit size. After putting them in the cooler over night they had a normal cheese cake consistancy.

        Quick question - I know I've asked you elsewhere but I can't find where I did so... what does the 1/2 in front of Splenda refer to? A cup? Thx. I've finally rounded up all ingredients and want to make these things. S-

          Hi AlaskaGirl -- I wanted to tell you I love these muffins. They were the first sweet thing I made after getting out of induction. These are a staple for me now, I love them -- thank you so much for coming up with this!!

                  I keep hearing about these Cream Cheese Muffins and my mouth is watering-if they're not induction safe I'm DEFINETLY mowing through OWL to get them. ~!!

                    I'll have you know I have been eating 2 of these muffins each day, and I my ketones strips ( I test every morning) still show that I am in heavy ketosis... so my answer would be yes these are induction friendly.. the recipie requires everything on the induction list...except for one item I think...

                      Regardless of the color you are in keotsis -- there is no such thing as "heavy" keotsis. It's like being pregnant - either you are or you aren't.

                      Darker color on the sticks could be from the foods you are eating, or you may not be getting enough pure water and are dehydrated. The book says 64 ounces pure water daily (nothing added).

                        Is the SF caramel syrup you use a Torani or DaVinci type syrup, or is it an ice ream topping thicker type of product that you would find in the ice cream topping area of the grocery store such as Smuckers?
