          This is the super easy recipe using pumpkin that taught me I LOVE pumpkin and helped me really add in some much needed carbs and fiber. This recipe is wonderful for satisfying a sweet tooth. It's a soothing comfort food...even though it looks like baby food! I haven't tried the recipe using the flax yet for the pumpkin bread but I'm really curious about how that will turn out! I just wanted to draw some attention to this recipe for anyone who needs a new food to increase their carb intake or satisfy a sweet craving legally!

            Successfully did Atkins in 1998 using 1992 copy of the book...before it was "hip". Lost 60lbs, exercised daily, felt and looked great. And then I moved in with a junk-food loving man, my mom got sick and passed away, then I suffered a spinal cord injury, and junk-food dude left me...and now I weigh 292lbs. That's 22lbs MORE than I weighed the first time around. It's 10 years later...I know this will work for me again.

                This recipe looked good to me, so I added a little cream cheese to make it creamier & have been having a small serving every night.

                Recently, I bought some Flax Seed Meal in an effort to... well, keep things moving. I added 2 tablespoons to this recipe, along with the cream cheese already added, and a little more heavy cream to mix it all in. The result was a very satisfying, nutty pumpkin dough of sorts.

                  i finally tried this and its good and filling. i add flax too and made 1 cup, ate half yesterday and half this morning. im goig to have to keep it a now-and-then treat though for all the splenda i had to put in it to make it sweet i think i used all my 3 packet, and coming from using only 1-3 packets a week its made me a little nervous about overdoing it

                      This so hits the spot! Thanks! I've been looking for something I can nibble on for hours and the taste and quantity of this snack fits the bill! Now I can toss those atkins bars out ^_^ The fact that it doubles as a serving of "other" vegetables makes me feel even better about this dish. Thanks so much!

                            I sometimes make it this way-

                            Mix the following together:

                            1/2 Cup Libby's Pure Pumpkin (NOT pie filling which has sugar)
                            1 oz cream cheese softened
                            1 Packet of Splenda
                            Pumpkin spice (to taste - not too much- it has carbs, too)
                            1 Tablespoon heavy whipping cream (Optional)


                            Heat in the microwave for 15 seconds. Stir. Heat another 15 seconds. Yummy. (Note - heating times may vary slightly depending on microwave)

                            And sometimes I will put it back in the fridge to cool, since I had to heat up the cream cheese to soften.

                            I enjoy it warm or cold.

                            Unless I plan on eating the rest of the can in a day or two, I portion it into 1/2 c servings and freeze.

                              I made Kellypa's version tonight, and it was delicious! After I took it out of the microwave, I added a very small drizzle of SF maple syrup, and it was delicious! Thanks again! Pumpkin pie is my all-time favorite pie, and this is the next best thing!
