    I thought I got this here but couldn't find it. So --- I'm posting it again! Naja, if you have this, please delete this one.

    1 1/4 c. fine ground nuts (walnuts or pecans)
    2 eggs
    1/4 c. butter (softened)
    1 oz. heavy cream
    1 oz. water
    2 tsp. baking powder
    pinch salt
    1/4 c. splenda

    Mix well
    Pour into greased individual muffin or 8" round cake pan
    Bake: 350 degrees for 20 min. for cake OR
    Bake: 375 degrees for 15 min. for muffins.

    (Each muffin or slice is: 3g carbs - 1 fiber = 2g carbs each

    (Can add topping made from heavy cream and splenda.)

    Hi Janice ,

    Well I tried this recipe last night, and I have to say I’m a very picky eater, that I enjoyed these muffins very much. Two thumbs up. Thank you for posting this recipe. :love

    I just have one quick question. Do you know approximately how many carbohydrates would be in each muffin??

      Angie, I'm sorry I forgot to state that important fact.

      My recipe said 7 muffins were: 3g carbs - 1 fiber = 2g carbs each
      (This is without any topping, of course)
