I am new to the board and I will introduce via the appropriate index entry. However, here is a new dessert that I recently developed. I love to go to the local steakhouse, but they have a dessert called Grapenut Custard (Pudding) that I have been craving for months. Being a pharmacist, I decided to experiment in the kitchen and I came very close.
3 eggs
3/4 C light cream
1/4 C water
(or 1/2 C heavy cream and 1/2 cup water, as long as it's 1 C total)
2 tea Vanilla
1/2 tea cinnamon
1/4 tea of nutmeg (I just use a few grates of the fresh nut on my zester)
7 Splenda packets
3/4 C of Almomd Flour (which is actually just finely ground blanched almonds)
2 TBSP Unsalted Butter
1. Melt butter in pan, brown almond flour. Careful not to burn then, just brown.
Mix all other ingredients with a wisk. It will smell like eggnog.
Make sure the almonds are cool before adding to the liquid or it may cook the eggs.
Mix it all together in a buttered loaf pan, and bake at 350 for 20-25 minutes. Just until the center is firm, but still a bit jiggly (sp?)
Cool in fridge, overnight is best.
Serve with whipped cream
Carb count is likely low.
