My DH has decided he wants to make cornish hens, never had them before, does anyone have an Atkins recipie for Cornish Hens?

take some unsalted butter and mince some fresh sage then mush it all together and stuff it under the skin of the whole hens .then slice a lemon and tuck it inside the chicken....butter salt and pepper the skin and then..you can bake them in a 375 oven until done or even better use some apple chips and slowly grill them with lots of smoke and indirect heat...OMG these are my dads favorite!!!!......

I love to spread sugar free jam or jelly all over the hen after seasoning it with the salt, butter & pepper, sage, etc... the red jams work the best...raspberry, strawberry, RHUBARB!!, etc.
DH LOVES when I make cornish hen this way. In fact, this was the very first dinner I ever cooked for him when we were dating and I was trying to woo him with my cooking (i.e. fastest way to a man's heart is through his stomach, lol!!), well, we have been happily married for 14 years now!!!!Mindykins

I made my hubby cornish hens once and you should have seen his face (this is a guy who can eat an entire roasted chicken at one meal) It was priceless.
Needless to say as good as they were, I won't be making them for him again. LOL he sulked like a little kid having to eat the 'pathetic little chickens'.Jen, 39, F

We always used to fix cornish game hens on the grill when my hubby's kids came over on the weekends. I am not sure why but my step son started calling them B**ch chickens... the name stuck and thats what we all call them now. lol :smackhead

I think so Nursey, though the ones sweetened with Splenda are ok too if you can't find unsweetened....Oh yeah, Orange or Apricot Marmalade are AWESOME on the ***** chickens!!!!!!!!! (guess made this way we can call them bitchin' chickens, LOL!!!)Mindykins

Ana you have no idea what you started here!!!! My husband says they are little ***** chickens because they are treated so special !!!!
now my kids say beeeatch so I am sure they will ask for beeatch chickens!!!!
