  • Creamed Spinach

    I tried the Creamed Spinach recipe from the Atkins site, and I must say, it was fantastic! I am not a huge spinach fan, but was trying to find a way to fit more of it in....and this recipe kicks some serious fanny!

    Just thought I would make a mention of it, in case anyone else might be looking for something to do with spinach, or at least a decent recipe.

    I think next time I might add some red pepper flakes and give it a spicy little kick.

      If its frozen creamed spinach you might want to check out the ingredients and the carb count, I haven't found one that is acceptable yet!

        I'm assuming it's this one. It does sound good. I'm not a huge spinach fan but may have to try this. I have some canned spinach in the cupboard, i guess it would work too, i'll just have to tweak the amounts:

        In New York, this is a much-requested standard steak-house side. One taste and you'll know why. Freshly ground spices (pepper, nutmeg) make a big difference in this recipe.

        1 tablespoon butter
        1/2 small onion, chopped
        2 green onions, chopped
        1/2 cup reduced sodium chicken broth
        1/2 cup heavy cream
        1/2 teaspoon salt
        1/2 teaspoon freshly ground black pepper
        1/8 teaspoon freshly ground nutmeg
        2 packages (10 ounces each) frozen leaf spinach, thawed and squeezed dry
        1. In a medium skillet, melt butter over low heat. Cook onion and green onions 5 minutes, until softened. Stir in broth, cream, salt, pepper, and nutmeg. Bring to a boil. Reduce heat to medium and cook 15 minutes, until liquid is reduced to 2/3 cup, and is thick enough to coat the back of a spoon.
        2. Chop spinach; add to sauce and mix very well. Cook, stirring occasionally, 5 minutes, until very hot.

          That's the exact recipe I have been using. I'm sure the canned would work as well, plus you have the added benefit of not having to wait for it to thaw or thawing it in the micro.

          Today, I made a full batch (last time I only made half, just in case I hated it.) and I added sauted mushrooms to it. I have a ton left over, so it will make a great microwave dish instead of firing up the stove. You could probably also substitute just mushrooms for the spinach (or even asparagus, if you like it), just make sure to adjust the carb count accordingly. A sprinkle of red pepper, or crushed red pepper flakes adds a nice spice to it. I always (ALWAYS!) use fresh ground nutmeg. It tastes fantastic...so much better than the ground stuff in the can.

          I have been living this WOE for almost a week now, and I feel wonderful...plus i have lost 10 pounds so far. I just know that for me, at least, I need to have flavorful and interesting foods so I won't feel deprived and want something bad. Eating something like this makes me feel as tho I am cheating already ensive simply because it tastes like it's restaurant or take out food instead of something that's reasonably good for me.

            Hmmm, well I think it is okay or else I don't think I would have bought it, but I will check the label first.

              I had some leftover creamed spinach, and I added mushrooms and made it an omlet filling! Sounds like you have the mushrooms and spinach all ready, if like omelets!

                I make a pretty mean creamed spinach without a ton of ingredients and I dont even thaw it first

                mix equal parts of butter and olive oil in a skillet
                add to that 1/4 minced onion 1-2 cloves of minced garlic
                when the onion has sauteed for about 3 mins add in your frozen spinach
                cover with the lid and wait 3-4 mins. open lid and stir keep doing this until your spinach is completely thawed. shouldnt take long. then add 3 oz cream cheese and 1/4 heavy cream (or less if you like it really thick)
                stir until the cream cheese is melted and there you go. delish everytime!
                ohhh and while its cooking I do season it with salt,pepper and nutmeg. nutmeg is the secret ingredient. it makes it soooo good. some times if I am feeling really adventurous I will add some shredded cheddar or some smoked gouda.

                  If you did find one that is acceptable, will you please share what brand it is? I'd love to be able to buy one premade that I can keep here at work in the freezer for emergencies, but I haven't been able to find one.

                    I know that this is going to sound stupid.. could I use fresh spiniach? I have a whole bag, and I am just saladed out
