  • Oh Fudge!

    I stumbled across this recipe, and modified it for Atkins. The original recipe contains honey.

    Here it goes:

    1.5 c Extra Virgin Coconut Oil (found at health food store)

    1 c hersheys, or other, unsweetened cocoa powder

    pinch of salt

    dash of vanilla extract (optional, tastes fine without it)

    your favorite sweetener, to taste.

    Mix all ingredients together, drop by spoonful onto waxed paper, or spread in a small baking dish. Refrigerate until set, and cut into squares. Try not to eat the whole batch in one sitting. My husband thinks this tastes like Mounds bars. They fixed my monthly chocolate cravings.

    Extra virgin coconut oil is a "healthy oil" found at health food stores. The brand I use is Garden of Life. I've tried other brands and found that the taste and texture was offensive. If your coconut oil doesn't smell like coconuts, the fudge won't taste as good. I haven't tried to substitute anything for the coconut oil. I don't think butter, or other oils would duplicate the flavor and texture the coconut oil gives. BTW, real coconut oil from the health food store is solid at room temperature, and liquid over 76 degrees.

    I've seen a similar recipe. Is the final product grainy because the cocoa powders have a little gritty texture to them?

        It wasn't grainy to me. I mix everything up real good with a fork. My coconut oil was a little melty because it was kind of warm in my apartment. I guess it could be depending on the brand, and the temp of the coconut oil. It's solid at room temp.

          I've used this method to fix any chocolate cravings, however if you can find cocoa butter it makes an even better end product because it doesn't soften as easily as with coconut oil! Yum either way!

              Nope! It the fat used in the manufacture of chocolate, but you can get it at some speciality stores (or wholesalers, i'm not in the us so not sure, but even here it's easy to get hold of) It's a neutral butter made from the cocoa beans if i'm not mistaken - if anything it's got a hint of vanilla.

                But the recipe says "if your coconut oil doesn't smell like coconuts, your fudge won't taste as good"

                  I guess it depends on your tastes - i've tried both but I prefer the taste without the coconut oil - just a personal preference I guess!

                    I see. Actually, I've never eaten coconut oil, We used to buy it to slather all over our bodies to combat dry skin from tanning, I love the smell of that stuff! But I never thought of eating it! The 100% pure coconut oil we bought was sold in the same section where the body lotions were!
