I stumbled across this recipe, and modified it for Atkins. The original recipe contains honey.
Here it goes:
1.5 c Extra Virgin Coconut Oil (found at health food store)
1 c hersheys, or other, unsweetened cocoa powder
pinch of salt
dash of vanilla extract (optional, tastes fine without it)
your favorite sweetener, to taste.
Mix all ingredients together, drop by spoonful onto waxed paper, or spread in a small baking dish. Refrigerate until set, and cut into squares. Try not to eat the whole batch in one sitting. My husband thinks this tastes like Mounds bars. They fixed my monthly chocolate cravings.
Extra virgin coconut oil is a "healthy oil" found at health food stores. The brand I use is Garden of Life. I've tried other brands and found that the taste and texture was offensive. If your coconut oil doesn't smell like coconuts, the fudge won't taste as good. I haven't tried to substitute anything for the coconut oil. I don't think butter, or other oils would duplicate the flavor and texture the coconut oil gives. BTW, real coconut oil from the health food store is solid at room temperature, and liquid over 76 degrees.
