    I know there are a number of pumpkin recipes posted around the boards- crustless pie, cheesecake, mousse, etc. but I'm looking for personal favorites. None of the ones in the recipe book are rated, and many of the recipes posted in other forums don't have a lot of feedback.

    If there's a recipe you like to make, please either post it here, or link to it. I'm sure I'm not the only one wondering!

    These are savory pumpkin dishes. Not the sweet dessert kind.

    Faux Mashed Sweet Potatoes
    1 can pumpkin puree
    2 tablespoons butter, melted
    2 -4 tablespoons heavy cream
    salt and pepper to taste
    Optional: ground ginger, ground cinnamon

    Pumpkin puree needs to have some of the water removed. There are two ways to do this: 1. put the pumpkin into a saucepan and set it over medium high heat. Heat the pumpkin, stirring constantly, to help evaporate the excess liquid. 2. Line a baking sheet with at least 4 layers of paper toweling. Spread the pumpkin puree out directly onto the paper towels. Place another 4 layers of paper toweling on top of the puree. Allow to sit for 20 minutes. Scrape the pumpkin off the paper toweling and procede with the recipe.

    Heat the drained pumpkin puree. Beat in the melted butter, heavy cream, salt and pepper (and any optional ingredients). Serve hot.

    Buttery Baked Pumpkin Slices
    1 whole sugar or pie pumpkin
    3 tablespoons butter, melted
    ground cinnamon

    Pre-heat oven to 350 degrees. Line a baking dish with cooking parchment or wax paper. Set aside.

    Scrub the pumpkin well, because it won't be peeled. Slice it half lengthwise. Remove the seeds. Slice the halves into 1 inch slices, across the width, so that it final shape of the pieces are semicircles, not wedges.

    Lightly coat the pumpkin slices with the butter. Place on the baking dish. Sprinkle with the cinnamon.

    Bake for about 30-40 minutes or until lightly browned and the tip of a knife inserted into the pumpkin flesh easily pierces the flesh. Remove from oven and serve warm as a veggie side dish.

      Oh cool, I'll have to try the Faux Mashed Sweet Potatoes. I love pumpkin slices on the grill, will have to do them in the oven

          I put a huge red chile powder swirl (this years crop is killer ) into my pumpkin pie recipe talk about awesome ..this year I am putting one in a sweet potato cheese cake ....shhhhhhh!!!

          I like to look at peoples eyes when they eat my food!
