I just came across an awesome recipe that I HAD to share!! The recipe was actually for waffles but I decided to try it as pancakes on my nonstick griddle. These are wonderful, wonderful, wonderful!! They didn't really require any syrup although I did use about a teaspoon on mine - sugar free of course...
These cook up quite thin - like crepes with crispy edges. I am going to use them tomorrow night at a get together I'm going to - I plan on mixing some DaVinci's SF German Chocolate syrup into some cream cheese and rolling them up.
Here's the recipe. I wasn't sure what the "whey protein Isolate -- vanilla" was, I used my Carb Safe Vanilla flavored drink mix instead. I am thinking any vanilla protein mix would work. I used calorie king to figure my carb counts, I figured each pancake/crepe was right about 1 carb. Let me know if I figure wrong please.
1 cup cream (6.64)
1/2 cup water (0)
3 tbsp oil (0)
2 eggs (1.3)
1 1/2 cups whey protein Isolate -- vanilla (9 - yours may be more or less)
2 tsp baking powder (2.6)
1 packet splenda (1)
Mix well & then pour onto lightly greased griddle (setting was at 350) These are fragile - wait until the entire surface is covered in bubbles and the sides look cooked before turning.
I layered them in between papertowels. This recipe made 21 nice sized pancakes/crepes.
