  • It's Chicken time!

    Post your favorite chicken recipe here.

    I made this a few weeks ago:

    1 can of coconut milk (ok, I know it's not induction friendly) you can sub heavy cream for the coconut milk.

    1/2 c fresh chopped cilantro

    1/2 diced jalepeno

    2 teaspoons of indian curry

    2 teaspoons tumeric

    1/4 c. vegetable oil (i used olive oil)

    1 packet of stevia to sweeten

    This made enough marinade for 4 pounds of chicken.

    I marinated boneless, skinless chicken breast halves in this overnight, and grilled the next day. Sooooo tasty.

    This is good with a cucumber salad:

    2 cukes, sliced thin
    a few splashes of vinegar (i used red wine vinegar)
    1/2 a packet of stevia
    sesame seeds to garnish

      My new favorite is simple:

      Chicken & "White Gravy"
      4-6 chicken tenders per person
      Sprinkle with McCormick's Rostisserie Chicken Seasoning
      Saute' in a mixture of oil and butter until cooked through

      For "gravy", heat 8 oz. cream cheese and whisk in 3/4 cup cream.

      MMMmmmmm! Yummy!

        My favorite chicken is made with rosemary.

        One large roasting chicken.
        Butter
        fresh romesmary

        rinse and dry the bird. salt and pepper inside of the cavity and the skin. insert your fingers between the meat and the skin to loosen the skin over the breast and legs. Remove the leaves of rosemary from teh stems, bruise lightly and mix into the butter. cram all that lovely butter into the space between the breast and skin. Toss any extra rosemary sprigs into the cavity. Roast as usual. (I baste the bird near the end with any leftover rosemary butter. I served this for Christmas this year for family and my boss -who was w/o family on XMas day, Im not a suckup- Anyway... the bird was a huge hit eventhough I took to bed with the flu and didnt get to enjoy any of it. Myboss still raves about my chicken lol)

          YUMMMMMM!!!! you guys this is looking good...Aphex...I am going to make that this week for sure!!!!
          mine is curry chicken of course but I have to find the recipe ....it is here someplace ..I have been gone for a while so I will find it and bring it back to you

          does anyone know where I put my curry chicken recipe...hmmmmmmm

            guess I have to make my regular curry chicken so I can document it again I can not find it ..but I did find these and they are my second and third faves

            Oven Curry Chicken

            in an oven proof pan with a lid (I use the short wide la Creuset Dutch oven however any covered baking pan will work ...put heavy duty foil over a baking pan...whatever works

            ....toss in to the pan ..one cut up chicken that has been powdered with

            .....1/4 cup of your favorite over the counter curry powder (I love Beta Pac blend from Jamaica in most Caribbean markets)

            .....a dash of cumin powder some powdered or fresh ginger like 1/2 tsp powdered or 1 tbl fresh...a tbl of paprika, a good tbl of hot New Mexican Chile, 1 tsp of black mustard seeds

            .....large dice whatever veggies you have I used 1 giant onion, 1 red bell pepper, 1 tomato seeded, 3 cloves garlic, 1 shallot, 1/2 bunch celery

            ....1/4 cup melted butter poured over the top and into a 425 oven for at least 20 min before checking and stirring then check and stir every 10 min until chicken is cooked and veggies are tender
            .
            ....at this point add 1/2 can of coconut milk (I just freeze the other half)
            and let the chicken cook for another 10 min salt and pepper to taste

            ......remove from oven
            squeeze of lemon juice or lime to finnish it off and a handful of fresh cilantro....

            serve with a low carb tortilla if your there ... or a salad and some sour cream or yogurt to top it...

            Malay Chicken Curry
            from The Harborview Family Medicine clinic

            Ingredients:

            1 whole chicken, cut into pieces
            this is best if the whole chicken is chopped into half the normal size pieces with the bone still in ...ok like you chop the breast into four pieces instead of two and the leg and thigh separate
            3 Tbsp oil
            1 can of coconut milk

            in a food processor put all these things to make a curry paste
            3 stalks lemon grass, bruised
            15 shallots
            10 dried hot redchillies, soaked in hot water for 20 minutes or until soft.
            1 tomato seeded
            1 inch piece of fresh galangal (if you can not find this just use more ginger)
            1 inch fresh ginger
            5 fat cloves garlic
            chop with the steel blade until this forms a paste set in a bowl

            take another small bowl and put the following
            either 1/4 cup good madras curry powder or you can add the following do not do both:
            1 Tbsp coriander powder
            1 Tbsp cummin powder
            1 tsp fennel
            1 inch stick cinnamon
            1 tsp turmeric powder
            salt to taste

            heat your deep skillet or wok put the oil in and gently saute :icondance turning and moving the paste for 3 min until the whole house smells like the paste!
            add the dry spice and saute' :icondance a bit more Add chicken pieces , stirring frequently until chicken is well coated with spices.
            then add the coconute milk simmer uncovered stirring from time to time until chicken is tender and sauce has thickened. (Approximately 20 minutes)
            you can serve this with a nice saute :icondance of green beans or swamp cabbage...enjoy!!!! you will be so fragrant yourself after this one ..sometimes I eat so much curry my socks even smell like it!!!! LOL
