  • Care for some Korean food?

    I made these yesterday and wanted to share them with you...I love Korean food...well I love food

    the nicest thing I think about all the side dishes involved in Korean cooking .. ..you can spend a day of cooking and have a week of lunches ...this wonderful food that evolves during the week because it is really like a bunch of different pickles ....

    here are two dishes that are my favorites.... during the week I will bring these with some deep friend tofu ..or grilled Korean style grilled chicken, beef, calamari..whatever ...

    Korean food has lots of low carb choices



    the first dish is the Korean bean sprouts ..made with nutty soybean sprouts they are so good and good for you!!!

    the second is a dish made with that lc/no carb yam cake..(the same thing shiritaki noodles are made from you can find it in a Korean or Japanese market or in better stocked grocery stores where the tofu is) I cut it into cubes saute some prepared kim chee in sesame oil mixed with a little canola oil then toss the cubes of the yam cake in this and serve warm or cold.



    recipe for the Bean sprouts

    take about 1 lb of soy bean sprouts and drop them in a pot of boiling water for about 6 minutes drain

    lightly pound (do not crush them just crack them up a little to release the flavor ..1/4 cup of toasted sesame seeds the mix them with 2 tsp kosher or sea salt

    mince 4 fat cloves of garlic
    also cut small 1/2 cup green onions
    1 tbl Asian red pepper flakes
    1 tbl sesame oil mixed with 2 tbl neutral salad oil of your choice


    add the oil to a skillet then toss the rest of the ingredients in ..cook over med for just a minute or two ..then add the bean sprouts and let it cook for about two minutes...

    you can eat these warm or cold

    You know what I've noticed. Alot of dishes that are noodle or rice based are only noodle or rice based because those items extend the veggies and the meat so you can feed more people with very few meat or veggies. I've made noodle or rice dishes sans rice or noodles and have found them to be equally yummy. But the flavorings have to be adjusted because they are too strong if you remove the noodles and rice.

      Man I LOVE me some Korean food - I'm half Korean myself and I grew up on the stuff. My favorites are the grilled meats like kalbi and bulgogi, and unfortunately most of the traditional marinades involve sugars. And it's sooooo hard for me to eat Korean food without rice!

        see I find Korean food easy to eat with out rice ..when I make bulgogi or the hot spicy seafood stews ..kimchee casserole ....or just the grilled stuff ..

        when you go to eat at a Korean restaurant the table is loaded with tiny plates of kimchees

        some of the marinades have sugar but most I find don't ..My Korean friends tend to lean away from sweets in general and do not use sugar in their kim chee's or their marinades

        Bunny you live near me do you ever eat Korean food in Federal Way or Tacoma?

          Oh it's definitely possible to eat it without rice! It just doesn't feel as "authentic" to me, but I can definitely do it in a pinch. Sometimes I'll make chigae (the hot kimchee stew) and have that with kalbi on the side. Sooo good! My mom always added some sugars to her marinades (some things she adds 7-up of all things!). I've made kalbi before using a little Splenda for the sugar and it's pretty darned good.

          It definitely is a unique cuisine Heidi! So different than other Asian food. Some of it's downright scary to look at for newbies, lol. My sister's boyfriend once said, "Korean food is the closest thing to Klingon food you'll ever see". Hee hee...

            I know what you mean about the rice Bunny ...I try to block it ...I have tried brown rice and it does not do it for me ...

            now that I have been at goal for a while I do eat rice once in a while ..have not found it to trigger any cravings or cause me to put weight on ..so I just have it when I go out to eat in a restaurant....

            we have got the best Korean food here in Western Washington that is for sure!!!

              Oh didn't see this part! We've had Korean food at a little restaurant off of Pac Highway near Seatac mall. It was really good, but SO expensive! Other than that we haven't found one we love in south Seattle yet. Any recommendations, more towards Federal Way or close by? We live near Southcenter. The places I know are mostly north of Seattle from when I lived in Shoreline. And of course there's Shilla downtown - but that's pretty pricey too.

              Have you been to Todai, the sushi buffet in Pacific Place? They actually have some Korean dishes as well. We went there the other night and I must have eaten my weight in kalbi, lol.

                if your mom speaks Korean there are some amazing Korean markets in Tacoma and some very authentic restaurants (PM me and I can give you details later)

                there is a place in Federal Way on Pac hgwy that is kind of hidden called Mirak that is pretty good ..there is nothing north of there ....to get really good Korean food come to Tacoma and go to Korea town on South Tacoma Way
