  • I am cooking for my daughters wedding this summer!!!!

    OMG you guys my daugther is gong to have another baby and told me she and my beautiful son in law to be...aka the daddy are going to call it legal this summer...My God they have been together so long I really thought it was common law by now ..but I am beside myself that she want to do Italian (SALLY I want to come shop for ingredients with you!!!!)...however reality I am going to get most of the stuff here because I know where it is and it will save time just to take it that way....

    so far we do not have a date ..I have no idea what the Helll they need to talk about after all this time ...good grief!!!

    I have a menu worked out in my head...well it has been there for a long time waiting for this chance with one of these kids ...

    she is giving me complete control of the food you guys

    I am of course doing courses and there will be Italian wedding soup ..I just need to find some escarole ...

    I have threatened her with a conference call this weekend if she did not give me a date by Friday!!!!

    Get yourself to a library and borrow "Lydia's Family Cookbook" and anything by Marcella Hazan.

    I like "Lydia's Family Cookbook" better than her other ones because the ingredients are more available, the recipes are family style (ie: can be multiplied for more servings), and the recipes are no-nonsense.

    You can do a "real" Italian meal:
    Antipasti--cured meats and fish, olives, veggies, cheese
    Pasta---separate, smaller course.
    Entree (meat and contorni--veggies)
    Dessert: you'll probably want a fancy dessert but you can have a nice selection of cheeses and fresh fruit on the side for those who want that.

      OMG Megs I am so excited and I have all Marcella Hazans cookbooks ..oh I you and I have that same cookbook vice that is for sure!!!!

      yup for sure Antipasti and I am bringing all of that with me ..I just wish I could make a trip to Providence before I go to Dallas..

      they have awesome fresh Mozerellla in downtown Dallas (if you remember I think I posted I found it through Gourmet mag and it was to die for)

      keep the ideas coming ..I asked if she wanted a giant tiramisu or a cake ..I can do the tiramisu but I can not bake at all ...

              Wow Heidi, that's terrific news! I'm game for a shopping spree with you anytime! Just hop over the ocean and..... lol

              I agree, Macella Hazan is great! She's gotten me out of a fix many a time.

              Oh, and you mentioned mozzarella. I had a wonderful "mozzarella di bufala" the other day... it had black truffle sauce (black truffles grated in olive oil) drizzled over it. Quite scrumptious as part of an antipasto! But the mozzarella has to be so fresh that it's almost liquid in the middle.

              Another great antipasto I had the other day, for the first time ever, was something called "pannelle". They're Sicilian, and are like crisps (do you americans call fried potato slivers crisps?) except that these weren't made from potato but from chickpea flour (besan), mixed with water and fresh rosemary and heated to thicken to a paste...then spread on a wooden board (about 3 mms) and when cold, cut into rectangles and fried. They made crisps that were 100% better than potato ones. Quite awesome, lightly salted. I made them the other day and they worked fantastically. Have now tried to freeze them at the "cut into rectangles" stage, so one can have them on hand to just fry. Will let you know if they work like that.

              Hmmmmm... now you've got me thinking unusual Italian things! What fun! You're going to have a ball preparing!
