I fried up some bacon, poured out the drippings, scrambled two eggs in the pan and added some mozzarella right at the end. Then I poured a little bacon dripping (maybe a teaspoon) back into the pan and wilted a cup of spinach leaves in it. It reduces to about a quarter cup cooked. It was delicious. Didn't add anything else. I love a simple breakfast.

I love that Dots! Try this:
Saute your spinach in the bacon grease, then scramble your eggs over the bacon and spinach and add some cheese at the end. Yummy! My favorite breakfast. Spinach and anything (bacon, ham, pepperoni, sausage) and eggs LOL.

I love doing that! lol i didn't know what I wanted this morning, and it was one of those situations where i kept adding something new until it looked like enough food. I loooooove spinach.

Oh I love spinach cooked in bacon grease! I bought the biggest bag of spinach that they sell at the grocery store this weekend! Just so I could do that! My mouth is watering just thinking about it!
