    HI everyone, after the hellish week I had last week I will not/cannot be caught unprepaired for dinner!
    So I am requesting your favorite crockpot meals. Thank you all in advance!! and have a great week!!! :nod

    Here's my version of a Reuben Crockpot appetizer

    The original recipe called for 1/2 cup thousand island dressing...Not needed imo

    Reuben Appetizer
    8 oz. deli corned beef, coarsely chopped
    1 cup sauerkraut, rinsed, well drained, and coarsely chopped
    1 8-oz. pkg cream cheese, softened
    2 cups shredded Swiss cheese
    1 tablespoon caraway seeds

    Mix all ingredients in 1-1/2 - 3 quart crockpot. Cover crockpot and cook on LOW for 4 hours. Stir to combine and scrape down sides. Dip will hold for 2 hours on LOW.

    I eat it with a spoon. Or I use it as a dip for raw veggies.

        When I'm in a hurry, I dump cubed meat, spices, a can of chicken broth and some vegetables (like maybe a can of tomatoes) into the slow cooker.

        Corned beef with cabbage is always a big winner of course, and does well in the crockpot.

        Try an entire chicken in the crockpot surrounded by your choice of low carb healthy vegetables - turnips, rutabagas, cabbage, celery, a bit of tomato, maybe some carrots if you are not on Induction.

          I like to brown a pot roast w/ butter, salt and pepper in a fry pan, then put it in a slow cooker with a can of whole or chopped tomatos and a couple of boullion cubes, add low carb veggies of your choice and cook on low all day long.

          Or Chicken or Beef in the crockpot w/ a can or two of Rotel tomatos and chilis and taco seasoning--chicken takes about 4 hours, beef you can cook all day, then shred it when its done and depending on what phase of Atkins you are in roll it up in low carb tortillas or lettcue leaves w/ sour cream and shredded cheese for a nice mexican dinner, you can also use either one on top of a salad to make like a "taco" salad, or make taco shells out of fried cheese and use it for taco stuffing!

          Pork Roast with sauerkraut is another great one that you can leave cooking all day, the pork just falls apart!

            run by your library or local book store there is a book called low carb slow cooker recipes and it has lots of yummy stuff in it. I love to make bbq in it and the recipe should be in the data base. I think this site has a crockpot section too

              yummy southwest recipe! chile verde!

              if you have time to roast and peel green chiles that would be wonderful! Or I believe you should be able to by good frozen peeled and roasted green chiles where you are....my friend actually buys them at Costco in New Mexico ..if you must canned with do but I really think fresh or frozen are much better!
              This makes a lot and you can have it all week or freeze some in containers for later!

              5 lb pork butt roast (cut into 1 cubes) can be made with chicken too I use whole cut up bone in chicken
              1 quart of fresh chicken stock or canned is fine
              1 tbsp cumin
              1 tsp rubbed sage
              1 bay leaf
              2 tsp salt
              2 tsp pepper
              2-3 cups chopped green chile
              1 large white onion diced
              minced garlic

              just dump everything in the crock pot and simmer all day!

                The other day I made this, and it is super simple:

                Into the crockpot goes:

                4 Cans of Sauerkraut
                1 3 lb pork Butt, whole
                1 lb of large diced kielabasa or smoked sausage
                1 Onion, large dices
                half a stick of butter
                carraway seed
                bay leaves
                salt and pepper
                dash of red pepper
                dash of vinegar

                Just let it cook on low all day, and if you can have someone stir it every couple hours, all the better. The onion should go in first, then the uncooked butt, then everything else on top. The butt gets super tender from the juices it is cooked with, and you will not ever need to cut it, it shreds super easily with simply the serving spoon.

                  This is one of my favorite ones, it is yummy and the closest thing to chinese food I have had....

                  Ingredients:

                  3 Tbl Any flavor SF Jam or Jelly

                  3 Tbl Low Carb BBQ Sauce

                  1 Packet of Splenda

                  2 Pnds Pork Picnic Ribs (Or anyother meat you want)

                  1/4 Cup Soy sauce

                  3 Cloves pressed garlic


                  How to Prepare:

                  Mix jam, bbq sauce, soy sauce and garlic in a bowl. Pour 1/2 the mixture over pork in a slow cooker. Cook for 6-8 hours.Pork will be very tender! Drain off some of the juices as they are pretty oily. Before serving mix with remaining sauce mixture. SOOOOOO GOOD!

                    I came across this recipe a few minutes ago.



                    6-Hour Chili
                    To ensure impeccably fresh meat, we recommend grinding it yourself with an electric meat grinder. Try using boneless chuck with some of the outer fat still attached.




                    5 lb. ground beef
                    5 garlic cloves, minced
                    1 yellow onion, chopped
                    1 can (28 oz.) chopped tomatoes with
                    juices
                    6 to 8 Tbs. chili powder
                    2 tsp. dried oregano
                    1 tsp. ground cumin
                    Salt and freshly ground pepper, to taste
                    1/3 cup cornmeal
                    2 cups unsalted beef stock
                    Sour cream, chopped red onion, grated,
                    cheddar cheese and/or cilantro for garnish



                    In a large, heavy sauté pan over medium-high heat, brown half the beef, about 10 minutes. Using a slotted spoon, transfer the beef to a slow cooker. Repeat with the remaining beef.

                    Add the garlic, yellow onion, tomatoes with juices, chili powder, oregano, cumin, salt, pepper, cornmeal and stock to the slow cooker and stir to blend. Cover and cook for 6 hours according to the manufacturer’s instructions.

                    Skim the fat off the surface of the chili. Ladle the chili into warmed bowls and garnish with sour cream, red onion, cheese and/or cilantro. Serves 8 to 10.

                    Nix the cornmeal and you'll have something VERY Atkins Friendly.

                      This looks like it would be good if you finsihed them off on the grill over high heat for a bit, just to get that nice char and carmelization that real chinese spare ribs have.

                        collard greens

                        collard greens are great in the crock pot!....onions, garlic tomatoes and whatever meat you like..I used lamb with rosemary, thyme and oregano...a little crushed red pepper it was fantastic! then crumbled feta on top.....

                          I always make my collards in the crockpot with ham hocks ohh yum!
                          last time I made them I put several containers in the freezer these are great to take for work lunches too.

                          I have never made lamb in the crockpot does it come out gamey??

                            Lamb is wonderful in the crock pot with collard greens ..it is not something we think of as going together but it is wonderufl. Or lamb and Kale, not gamey at all but you have to like lamb! just put about a lb of large cubed lamb (I use leg)
                            brown onions and lots of garlic in olive oil add the lamb the greens herbs saute around a little dump in the crock pot with salt, pepper some crused red and a cup of red wine, can of good Italian tomatoes with basil simmer all day it is to die for! Try some crumbled feta on top
