    I told you they were to "die for" !!! :yummy :yes Nice and moist with a wonderful texture and the best thing about it they are only "1 carb" and filling!!!! Glad you enjoyed them!!!!!

      There isn't a single recipe of her's that I've tried that I didn't like. Love that she has the pictures to show you what it's supposed to look like and the carb counts.

          I'm waiting out the 5 minutes it says to let them sit and then I'll be throwing them into the muffin tin and the oven.

          They might turn out to be Cinnamon Nuggets though, because I only had a dusting of baking soda left in the box!
          I used half chcocolate, half caramel syrup.

                  Thanks for this site. My son and DH want to bake me a cake for my bday tommorrow. They were thinking cheesecake but my heart would be more for this mocha chocolate. DH said bookmark it and he'll give something a whirl.

                    Great idea! We are going out to dinner with my stepson and his girlfriend tonight and they are coming back for presents. I asked him if he made sure he told them not to bring a cake, but it might make them feel happy to have me blow out a candle on the muffin!

                      Fluffy, that's so cute!! I think like you, its not always that I feel deprived- but my family sometimes thinks that I am! They don't understand that I chose this WOL and I like being in control!! And I like my new smaller body! No piece of cake or anything else that is bad for me is worth having.

                        Hey Missy, I made these today. I loved them. Much better than the recipe I was using. Much lighter, I think because of less eggs. Thanks for leading me to this site.

                          I made this recipe with ginger instead of cinnamon (why can I never remember to buy some?) and they tasted great.

                          I only did half the amount for 6 muffins hoping that they would last a few days if I only eat one a day. some hope - I gave my DH one to tast and he then ate two more!!

                          But - I dont have any baking soda so used twice the amount of baking powder instead and they didnt rise much - will they rise more if I buy and use baking soda next time?

                          I shall hide some of them next time too, so i will have some for ME for several days!

                            No more than 2 T of flax meal a day, right?

                            I'm really anxious to try these muffins, but I have a question. Since each muffin contains 1.33 T of flax meal, are we really limited to just one (or one and a half) a day?

                                Yes, use the correct amount of baking soda and they will rise really nicely!! Same with the cinnamon; I think that makes the recipe taste really good.

                                The Mocha Chocolate Cake is great to have on your birthday.

                                Every recipe I've tried has turned out wonderful.

                                Try the enchiladas!!! it takes a few times to learn how to turn the crepes over without breaking....but well worth the trouble. Once you learn how to spray your spatuala and CAREFULLY lift all the edges; THEN flip quickly...they turn out awesome!!!!

                                Glad to hear everyone is enjoying the muffins!!!!

                                Blubberly: don't know what to use instead of the syrups? Does anyone else????
