If you are just trying to get the sweet taste just used a few teaspoons of splenda..now don't forget that you would then have to count the splenda as part of the carbs..hope this helps and thanks for posting this site it is great!!!

undercat, are you in owl or induction? I think if you are in owl you could have more- just don't get too much flax unless you know how it affects you!

I agree she should get some kind of award! I made this awesome Mushroom Chicken and Sausage casserole from the site last night, it was soooo good.

My gf even popped by unexpectedly because she knew I was cooking and had a couple plates of it herself!

Missy: I second the nomination! I made the muffins last night and they were to die for! Now, I'm busy printing off all the other recipes and sending them to my Atkins friends. That brownie recipe sounds a little too good for me though. I may have to wait and add it to the list for my "I made goal celebration" party! (Yes, I'm so confident that I'm going to make goal, that I'm already planning my party!).

                Thanks again!

Another nomination here! Made the Bacon and Swiss Quiche last night and my husband and I loved it! I thought it would be bland but the balance of swiss and bacon was excellent. My husband had never tried any type of quiche before but he absolutely loved it. In fact after this morning's breakfast we don't have any left! I can't wait to try more recipes!

Just whipped up a batch of these muffins -- since 12 is a lot for one person, I added some blueberries to a couple, and I also added some melted unsweetened chocolate (and some spenda) to a few. I'll let you know how the variations turn out!

Just got these little suckers out, and let me tell you what -- a squirt of that splenda-sweetened whipped cream on the chocolate variation was just a little too good! Luckily I one made four of them that way! I expect it's a lot like that quickie chocolate flax care recipe I've seen around! Truly, I could have eaten all four of the chocolate ones right then and there!

I agree--this recipe is a keeper. I made this for a brunch yesterday; as I was gathering my ingredients, I realized that I was out of flax! :yikes So, I substituted a cup of this low-carb hot cereal I have from CarbSense--all it has is flaxmeal, soy protein, wheat bran, pumpkin seed flour (don't use this in induction!!) and spices, and the cinnamon I use is the cinnamon plus from Pampered Chef--a blend of cinnamon, nutmeg, ginger, allspice--they were SO yummy!! Very fall-like--my friend loved them! I like that these are not quite as dense as the other recipe--very moist! However, I had a hard time stretching this over 12 muffin cups--some were rather small...

I think if you use all flaxmeal you should be able to spread them into about 11 muffins. They really puff up a lot. I double the recipe and freeze them. Be sure and store them in the refridgerator. They are WONDERFUL with the Zero Carb Whipped cream!!! :yes

                            Smiles,

Okay, I have not tried the muffins yet (still have chocolate amaretto ones in the freezer)... But I have tried:

                              Texas Chili Soup
                              Broccoli Cheese Quiche
                              Pumpkin Bread

THEY WERE ALL EXCELLENT!!!! :joy :joy :joy

Can't wait to try more recipes next week!!!! Thanks for the site!!! :hug
