      YUMMMMMMMMM!

      I wanted to try something different for breakfast today, cruised Linda's site, and made these muffins. They turned out perfectly! And they're very filling. I had two for breakfast, and I'm set! They were very moist and sweet, and with a bit of butter, a perfect mix of sweet and salty. They are very much like lighter bran muffins. This recipe gets perfect marks in my book!

      I noticed people having issues with what syrup they used...I used SF Da Vinci Vanilla, and it worked well.

          Stella--I'm guessing it would work, though depening on the texture of the syrup, it might make the batter a little thicker. I will say that 1/4c. of the SF syrup made them a little sweeter than I'd like--they taste great, but next time I will add less syrup.

          Have you tried DaVinci or Torani Sugar Free syrups? They're usually in the aisle with coffee and tea. I think they're well worth the $4 a bottle...very tasty, and you can make Italian sodas with them, which are a real treat!

            That sounds good - I think our local super Wal-Mart carries the DaVinci syrup, I just wansn't sure what else to use them for.

            Also...I all of the links on this topic are broken. I went to Lindas website and could only find a "Spongebob" Flax Muffin. Is this what you made? I was thinking of trying Labarum's recipe because it looks induction (extended) legal. Did you have a different link?

            Finally, how do you make an Italian Soda?? Sounds Great!!

            Just to add...yesterday I made one of your recipes for Chocolate Mousse! WOW! That was so delicious! I had to swear to myself I will not make it again for at least 2 weeks. YUMMMMM. (I'm not sure if it was your recipe or you just mentioned it. Whipping cream, splenda and cocoa power. )

              I will note that these muffins are not induction friendly! Flax seeds must wait until Rung 3 unless you are having BM issues, then the flax can be used as a fiber/natural aid thing.

              Italian sodas are really easy to make:

              1) Fill a glass with ice
              2) Pour 1-2tbsp SF syrup in the bottom (remember to count this towards your daily splenda/sweetener allowance)
              3) Fill with club soda
              4) Top with heavy cream (make sure you don't go over your daily allowance on this if you are on induction)

              I will make these at home sometimes if I want a "fancy" drink. I also order these at this little coffeehouse where my bf and I go for lunch sometimes. The first time I ordered one they looked at me like I was nuts--usually they are made with half & half, and topped with whipped cream. I always tell them to go easy on the SF syrup too--you'd be surprised at how sweet it is, and they really like to pour it in!

                Oh! I was confused and thought I could have them on induction. I guess they would be a nut though. Thanks for saving me on that one!! LOL!

                I finally found it at the store and I bought three types. Milled Flax Seed (Hodgson Mill), Bob REd Mill Whole Ground Flaxseed Meal, and Bob's Red Mille Whole Flaxseed. I was so excited to try to make the crackers. I guess I should wait on those too.

                The Italian Soda sounds wonderful. I think I'll try that for a fancy New Years Eve Treat. Thank you again!!
