  • favorite condiment or spice you mix yourself

    do you have a favorite "secret" spice mix or condiment you toss together and keep on hand ..one you can not live with out that makes everything taste good to you?....mine are

    I keep a jar of 1 part real New Mexican red chile 1 part kosher salt and 1 part toasted sesame seeds this sprinkled in hot oil or butter and poured over veggies...fish....chicken whatever you like it is a great combo of flavors and a very quick fix..

    I don't pre-mix much, but I keep a ton of spices around for daily cooking. I will tend to get on kicks where I get hooked on one spice for a while and use it in almost everything until I figure out exactly how it balances out with other flavors.

    Cardamom, cinnamon, cayenne, and coriander seeds tend to play very nicely together though.

      My own taco seasoning. I really love it, and its basically every red spice I have goes into it, chili, paprika, red pepper, cumin, more cumin, beef buillon, garlic and onion powder. Its a winner

        Well for fish I like a mayo, lemon juice, wasabi mix. This also works with cajun spice mix instead of the wasabi.

        P.S. this gets better as it ages.

          I made my own Thousand Island salad dressing. I've never really liked ranch and I can't just use creamy italian forever (although it's really good with pepperoni and banana peppers).

            One of my favorite sauces I make my self is so easy...Tartar sauce, made w/ Mayo, Capers w/ a little of the juice and a sprinkle of onion powder.

              How is that tartar sauce??? Hubs misses his so much, and I would love to try something.

              Does it taste remotely like the real ting??

                IMO its better than 'the real thing" but, I love capers so I guess it depends on your tastes. I know that Nurselady loves it made w/ capers too so I'm not the only one--it'd be worth a try, just make a tiny batch at first.

                If you prefer the regular stuff you can make that w/ Mt. Olives Sugar Free Sweet Relish (sweetened w/ splenda) and Mayo.

                  I think it might be worth a try, I see loads of other recipes using them, and if I like them, it could be worth it

                    LOL tiny snails! hahaha I love it. You do know what they are now don't you? BTW IMO the tinier ones are better, in my local grocery store they come in several different sizes, I like the little ones that are just a little bigger than a whole peppercorn--they make the best tartar sauce because you just leave them whole and don't have to chop them up! I love them, I can eat them straight out of the jar and they are excellent with caviar! yummmm

                      OK, I picked up a small jar a walmart today.

                      I opened them, and tentatively picked one out with a fork and put it in my mouth.

                      After I realized it was NOT going to be a slimy snail, I enjoyed it, I mean REALLY enjoyed it, and dug out a spoonful.

                      I think I am going to try to make that sauce for my chicken wings tonight, thinking of it makes me drool LOL

                        Russian Dressing. I combined Craig Claibournes's recipe and Jacques Pepin's recipe for my own recipe. Very good. Very inexpensive and indispensable for my Reuben casserole.

                          Aren't they wonderful!? I love them too, I can eat them straight out of the jar as well. I don't know about using that sauce for chicken wings though, let me know if you did--to me it tastes more like a tartar sauce than something I would put on wings, but you never know.

                            I have an old salt shaker that I mix cayenne pepper, black pepper and garlic powder in. I sprinkle that on my salads, chicken and meats. I've even used it on my veggies a time or two. Adds more zest to everything I use it on.

                              For sweets, my own homeblended PumpkinPie/Gingerbread Spice mix (asian ground ginger, cinnamon, cardamom, allspice, clove).

                              For savories and vegetables, especially steamed greens, I almost always whisk together a mix of toasted pure sesame oil (I've got a black sesame oil that is to die for), minced green onion, tamari soy sauce and toasted sesame seeds.

                              Yum.
