I use almost a whole bag of almond flour, thanks to all the groovy recipes I got before the move. I used the almond/parm crust on some pork chops and served it with a thrown together dipping sauce of Tom. sauce, parm cheese, basil, garlic and onion powder. It was AWESOME!!! I am using the crust tonight on fried green tomatos. *drool* I will probably make a mayo/blackening seasoning sauce for dipping with those.
I also made those 3 minute chocolate cakes. Let me tell you! It DON"T get no better than those with a cup of strong coffee. Those are killer good!
I also couldn't get chili/lime dishes out of my head (THANKS ALOT HEIDI!) I made a tossed salad of cubed avocado,vidalia onion, jicama match sticks, diced tomatos tossed with chili powder, lime juice, pinch of salt and cilantro. Yeah, I admit... I licked that bowl clean! DH hates avocado and raw tomatos. It was all MINE MINE MINE! Well, my toddler ate it too. He said MMmmm after each bite.
I also managed to budget in a table top gas grill. Well, I didn't budget it in so much as just put it in the necessity column. Who cares about keeping the lights on when you have a grill again after almost 2 yrs without!
