  • How do I store Revolution Rolls?

    I made a batch of revolution rolls before I went to work today. Since I was in a hurry, I let them cool, then just wrapped the pan in tin foil, then when I got home I put them in an airtight container and left them sit on the counter. After thinking about it, um, am I setting myself up for a good case of food poisoning?

    They're made out of eggs and cream cheese, which need to be refrigerated. But then I thought...cake has eggs in it and doesn't need to be refrigerated. However, I wouldn't cook an omlette and let it sit out.

    Think I should toss them and make another batch or just go ahead and eat them?

    I've left them in an airtight container at room temperature for a day and they didn't get moldy. However, I tend to store them in an air tight container in the refrigerator.

    I haven't had any problem with them when I use them as sandwich rolls and bring them along for a trip or picnic.

    Enjoy those rolls. They make a good substitute for sandwich rolls, as a shortcake-type base, or even as a pancake substitute.

    They come in very handy if you like having sandwiches.

        I have stored them in a ziplock for 3 days at room temp with no problems. Never longer than that cause I eat them all too quick.

                    I found out about those Rolls very early into my Atkins. I had read about them in some article (that sneered at the Atkins WOE, of course.) Anyhow, I did a google search and found this recipe:

                    I also found evidence that the recipe originally appeared in the first Atkins book in 1972. When I got a hold of that book, the only change between the current recipe and the 1972 one is the original recipe used 3 tablespoons of cottage cheese in place of the cream cheese and a different artificial sweetener.

                    I tried the originals. They taste better than the cream cheese version, imo. But you need to mash the curds into a fine paste, otherwise, it will give the rolls a weird texture. Ricotta, however, works the best. Unfortunately, cottage cheese and ricotta aren't Induction friendly.

                    The other variation is to substititute one tablespoon of the cream cheese with 1 tablespoon of a fiber supplement like psyllium husks or Benefiber (a hydrolyzed guar gum) or a protein powder.

                    Also, the recipe I posted in the 14 Day Induction forum, tells you to add a pinch of onion powder. I found that by adding that pinch the rolls have a better flavor. Nothing oniony but it gives it an extra "something", far better than the Splenda would add. That was my discovery when I tried to make an onion-herb flavored Revolution Roll---which also works well particularly if you want a spicier sandwich bread.

                    The other hint I have about them is that I use a muffin top pan to cook them. It gives me a more uniform bun/roll.

                    But the Roll recipe is incredibly versatile. If you use the Splenda-version, and bake it in a lined jelly roll pan, you have something that will resemble a sponge-cake, suitable for using as a jelly roll--filled with whipped cream and/or fruit. Use the version I have int eh 14 day induction forum, but add onion powder and add dried herbs, bake in a jelly roll, then fill with pepperoni, sausage, tomato/pizza sauce and cheese, roll it up and bake again---you have a stromboli or fill it up with a combo of cooked vege and meat you have a type of roulade.

                        Yup, these are good. During the spring, summer and fall months, I take day-trips on weekends. These rolls form the base of my sandwiches on these trips. they hold up well as long as you don't use a moist sandwich filling like tuna salad. But things like roast beef, turkey or chicken sandwiches are fine fillings for them.

                        You can even use them for your own egg McMuffins.

                        The thread in the 14 Day Forum, has directions for making the rolls into wraps. Again, this comes in really handy for things like fajitas, etc.

                          Im still playing around abit with these, sometimes I think I dont beat the egg whites enough or fold too much and they can be a little flat. I like to slice mine to get 2 halves. I then toast them (toaster works but toaster oven is much better) then top them with whatever I want. I eat them as an open faced sandwich. Tuna, egg salad, lunch meat + cheese toasted till melted. Yummy, it makes me want to actually eat lunch!
                          I store mine in an airtight container in the fridge as well. Sometimes they tend to stick a bit together. BTW, I have found that I really dont need to use the parchment/wax paper to cook mine. They worked fine for me on just a regular old cookie sheet (well I used the air cookie sheets) and I used a metal spactula to pull them off like I would cookies.

                            Your cookie sheets are in better shape than mine because everything sticks to them. lol.

                            Once I started baking them in muffin top pans, I stopped baking them on a cookie sheet because I got a more even bun shape (instead of the odd things free form things I had been getting.)

                              Yeah I really do need to use my muffin tins. If I dont get the eggs whites stiff enough they go kinda flat and are hard for me to cut in half hehe. Do these freeze well?
