    Not hijacked at all, MoG!

    It's amazing how much a paper shopping bag can hold, lol. When I was a kid, we had a neighbor who used to go peach or apple picking and make preserves from them. It was usual for everyone on the block to get a jar of the stuff.

    I think I try zucchini pancakes (like potato pancakes, but using shredded zucchini instead) tonight.

      Megs, I LOVE zucchini pancakes. I eat them with a horseradish dill sauce. 1 part sour cream, 1 part mayo, 1 part grated horseradish, and a spoonful of fresh dill. (I am not so good with measurements when it comes to recipes)

        Do you salt the zucchini to get rid of the excess moisture when you make the pancakes?

          There is a recipe around here somewhere for the zuccini pancakes Megs. I think that recipe did call for you to salt it and drain it first. Sounds yummy.

          And yes, it is amazing how much you can fit in a paper shopping bag!

          The year before last one of the Agents here brought a pick up truck and parked it in the parking lot, he came up and told everyone who was interested that we could go out and help ourselves to the Zuccinni and Yellow Squash in the truck. LOL, we went out there and these were the biggest squash I had ever seen! Apparently they have a large garden and they went out of town for 2 weeks, they told their teenage sons to harvest them while they were gone but the kids didn't. By the time they got home it looked like some kind of Sci Fi experiment! They literally filled the pick up with these huge squash!

                Ohhhh free zucchinis... I'm jealous!


                Biggest way I eat zucchinis now is just like I used to eat pasta. I know a lot of people slice them up all julienne or whatever to form noodles, but I just cut a zucchini into chunks, nuke the chunks in the microwave quickly to soften them a bit, and then pour my seafood alfredo or sausage marinara -- or whatever sauce I've made, over the zucchini and eat it just like I use to eat a dish of pasta. The zucchinis are even better than the pasta used to be!

                I love the zucchini pancakes. Freakin delish! Fry those babies golden brown. I eat them with sour cream on top.
                No stats. Not weighing anymore ever. Will post "before and after" pictures when I want to. The end.

                  Yum! The only thing that could beat free zucchini would be free eggplant. I am jealous.

                    I totally agree!!!!!!!!!!!!!! Unfortunately, I don't think anyone in the 'hood is growing eggplant this year.

                          Hmmm...I'm thumbing through the August issue of Gourmet. They have a chilled zucchini and cucumber soup. I might have to try that!
