I stack the mixture high, then cut them in half and toast them before eating. So one roll gives me two open faced sandwiches. Sometimes they do come out a bit flatter then usual, but I think it was because I didnt whip the whites enough and the excess folding. Someone also mentioned using a muffin TOP pan to form them. I wonder if you could use like those doughnut pans if you grease it well enough to make like bagel shapes.
I've never made them..so i don't have much to offer...but did want to say i'm extremely jealous of the Kitchen Aid mixer! My dream is to someday save up to own one

      Re: Atkins Revolution rolls...help?

Oh girl, I waited so many years to get mine! Here's my advice. Check out Williams sonoma, they change the colors for the season and put them on sale. I bought the Accolade, wich is an ALL STEEL drive (no nylon gear in this one), 400 Watt, 5quart bowl. A little write up below....
"Equipped with all-metal construction and ten speed controls, the Accolade 400 stand mixer is durable and versatile, with a powerful 400-watt motor that easily handles tough mixing jobs, including stiff bread dough or cookie dough. The Accolade 400 owes its flexibility to its planetary mixing action, which spirals the beater to 67 different touch points within the bowl. This makes the beaters not only spin but also rotate for quick, complete mixing. The unit's soft-start function, meanwhile, gently accelerates to the selected speed to reduce splatter, while its electronic speed sensor helps maintain a consistent mixing speed, even when adding ingredients. A final bonus stems from the unit's tilt-back head, which locks in the up or down position, ensuring convenient access to the 5-quart polished stainless-steel bowl (holds up to 9 cups of flour) and its easy-to-grab ergonomic handle."
When I bought mine, you could only purchase them at Williams Sonoma, I am unsure of its current status. I got a free mini bowl with it, but have seen many many offers such as a free ice cream maker (I own this as well) with any KA mixer purchase. I usually see these around mothers day, xmas and such. I absolutly love this mixer, I make everything from cookies to whipped cream and pudding.. has not failed me once. The one I purchased was brand new, not refurbished, and it was about 150 bucks. They usually go on sale I think about 199, but I got mine at the very end of the sale. I didnt get the most awsome color (teracotta), but at that price I didnt care if it was 70's avacodo green LOL. Ive seen some real pretty spring colors, If your store doesnt have what you want.. dont worry, they will order it from another store and have it sent to theirs for you to purchase. They did this for my stepmom free of charge. Now she has two models, she says that the Accolade is a bit loud compared to her other one (she has a bowl lift I thought it was the artisan but must be porofessional series) but she did pay double for it when it was on sale. Also, I don't remember seeing them listed on their site, Im pretty sure I called them and asked around. I remember seeing them in their stores maybe 6 months ago on sale again because I joked with my husband about getting a different color.

Wow Sashi $150!!!!! I've never seen them here (i'm in canada) for under $250! And that's for no choice of colour, low end, clearance rack 'as is' ones. I will be in the States in the fall, so I will have to maybe save up and keep my eye out for one. I did see one at Target on sale when I was in Boston, I think it was around $140..which was awesome (thought they only had white). I'd love my choice of colour but if i can get it on sale, I'd take anything!

I jsut found the professional series on the Sears website here. $749!!! for a mixer! I'd love one..but not THAT badly LOL http://www.sears.ca/gp/product/B000F...odeid=16357531

The Accolade one is only $399..a bargain compared to that.

Sorry I think i've highjacked this thread.

First, the bowls you are using should be glass if possible, plastic as a last resort. Absolutely squeaky clean and dry. Grease, even minute bits, can flaten your egg white. Whip the whites till the form very stiff peaks. In a seperate glass bowl, mix the yolk and other stuff together. I put about a third of the whipped egg whites in with the yolk mix and fold this maybe 4 times. There is always big white streaks left. Add another third and fold again about 4 times. Then I add the yolk and egg whites to the remaining whipped whites and fold just until completely mixed. You will see streaks of whites still even at this point. Then I drop the mix onto a silpat mat. Then bake as directed. Sometimes they are very nice and tall but they flatten if I over mix. Either way they get eaten. I always use one roll for the top and one for the bottom. But I am decadent like that!
Thanks MommaGlass!! I'll try that variation...maybe mixing all the yolk mix into the whites mix was causing me to over-mix it And I need to get a glass mixing bowl...right now I have a metal one.

No, but it drives to the store and does your shopping and takes the kids with it so you can finish the chapter in your book. *wakes up* Wow what a great dream!!

I don't use a mixer enough to constitute the buy. I used to make the hollindaise sauce fresh every night when I was cooking professionally. All done by hand, baby! I had great arm stamina after mixing constantly for 20 mins straight every evening!! Mmmmm... Hollindaise..... *drool*

A squeaky clean metal bowl is much better to use than a plastic one. I bet it will work just fine if you don't have a glass bowl big enough. Sorry my reply is so late!!

a quick question for anyone... everyone who has made these... do they always come out flat? Did i not whip the egg whites enough? i thought that they were stiff peaks, but i am new to this... how long usually? I will try the muffin pan next time. Thanks! Oh, has any one ever added garlic powder? I am a garlic freak, and tried it... they taste ok...

                      Re: Atkins Revolution rolls...help?

I think if they flatten out alot, you didn't cook them long enough. When you drop them onto your pan, they should be poofy and stand up. If the batter doesn't, then you've over-folded.

What I do is to cook them, then leave them in the turned-off oven, with the door slightly ajar, to make sure they completely dry out on the inside. They won't be as poofy as they were when you first drop them, but the texture of the rolls will be alittle spongy.

                      Re: garlic powder

The adaptation of the Revolution Rolls, I posted here:http://www.atkinsdietbulletinboard.c...ead.php?t=6807

uses a pinch of garlic powder. I used the garlic powder because I thought it gave the rolls a savoriness that the sweetener in the original version didn't have.

You can add more if you want, but be sure to adjust the carb count accordingly. Likewise, you can flavor them with other herbs and spices to suit your taste.

                        Re: Atkins Revolution rolls...help?

I make a desert roll using th original recipe plus cocoa powder, splenda, and vanilla to taste. Be aware that the vanilla seems to react and make them much flatter, so they come out almost more like giant cookies

Sorry, but no. You couldn't possibly get them whipped until stiff with a fork and not even a whisk. It takes a while with a mixer.

I made my first batch of revolution rolls yesterday, and I must say, I was pleasantly surprised. They were great warm with a little bit of butter.
