Alot of other low carb cheesecakes have you doing this or that or this and that. But cheesecake is basically an egg custard with cream cheese, so it translates directly imo.
    That's good to know...I really like the recipe I have I may try some pecans on the top this year.

      use a fresh sugar pumpkin and roast it yourself in the oven that is my best advice!!!

            Well I made the pumpkin cheesecake yesterday! Hubby really like it!

            For the crust, I kept in mind how I used to make crust from scratch, flour, water and butter. So I was taking a risk doing this with almond flour...turned out good though!

            I mixed 2 cups of almond flour/meal with 1 1/2 Tbs water and 1/2 cup of softened butter (didn't measure it..that's a guess). Added some splenda too. Then I pressed it into the pie pan...it was a pain but worth it.

            Then I proceeded with the recipe...making the low carb substitutions. I freaked out when I saw it said flour was required, then saw it only needed 1 Tbs of it- so it couldn't have made that big a difference, I omitted it.

            Next time, I am adding more splenda. I used brown Sugar Twin instead of regular brown sugar. It was sweet, but not as sweet as I wanted it to be. Still very good though!

            The almond crust gives it kind of a "gourmet" food taste...it's great stuff!

              that sounds wonderful!!! I am so impressed with your improvising how cool!!!!

              I am going to try this recipe Wed with no sweeteners and by just adding whole fruit ..I am going to have to think this through I want the pumpkin to be the
              predominant flavor...so I have to be careful what fruit to choose..I can not use bananas because they send me into an eating frenzy ....any ideas on what I should try? I was even thinking of just making a sweet potato cheesecake and skipping the pumpkin or mixing half and half maybe ...hmmmmm the more I write the more I am thinking half and half!...

                ok I will roast the crap out of the sweet potatoes and the pumpkin so I can get them really sweet...and then try to make the cake and see what happens ... although this will probably not curb my cravings for sweet things I want to come up with something good for the holidays with out the sweeteners or the sugar

                  Does brown sugar twin affect you the same way as regular artificial sweeteners? When I get home I'll post the recipe (with my substitutions). It didn't taste too sweet, but I only had the brown sugar twin and a sprinkle of splenda. Since it didn't taste too sweet, it didn't trigger any cravings for me. (although I was a piggy and had a second serving because I haven't had cheesecake in forever! )

                    no chemicals that was my pledge ...I just want to avoid them entirely ....just for a few months and see how I do..but I am still using them when I make things for my coworkers to try ..they are beyond honest and will tell me if stuff tastes like crap ....they love most of the stuff I have learned from Scott123's teaching me about sweet synergy

                          just an update on making a pumpkin cheesecake with no sweeteners and trying to use a sweet potato...it was really good with a packet of sweetener dumped on it
