  • Why so high in carbs???

    I haven't had time to look at this recipe in carb count detail, but by just looking at it, could someone figure out why there would be 23 carbs per serving?

    Thanks, no need to look it up, i will do that later, i was just curious if anyone can eyeball it and figure out what would cause it to be that high.

    Spicy Shrimp with garlic almond sauce
    ACTIVE TIME: 25 MIN
    TOTAL TIME: 1 HR
    SERVES: 4
    THE GOOD NEWS Almonds are an excellent source of vitamin E. One handful provides half of the recommended dietary allowance for adults.
    ingredients
    8 garlic cloves, peeled
    2 jalapeños, preferably red, halved and seeded
    1 large tomato, halved
    1/2 cup whole blanched almonds
    1/4 cup extra-virgin olive oil
    2 tablespoons Cabernet or red wine vinegar
    Salt and freshly ground black pepper
    Cayenne pepper
    1 1/2 pounds large shrimp, shelled and deveined
    1 teaspoon ancho chile powder
    1/4 cup dry white wine

    directions
    Preheat the oven to 350°. Spread the garlic, jalapeños and tomato halves on a rimmed baking sheet and bake for about 30 minutes, or until the garlic is golden brown and just tender. Spread the almonds in a pie plate and bake for 7 minutes, or until golden brown. Let the almonds cool and coarsely chop them.
    In a food processor, coarsely puree the garlic with the jalapeños, tomato and almonds. With the machine on, gradually add 3 tablespoons of the olive oil, and then the vinegar. Scrape the sauce into a bowl and season with salt, black pepper and cayenne.
    In a large skillet, heat the remaining 1 tablespoon of olive oil. Season the shrimp with salt and pepper and toss with the ancho chile powder. Add the shrimp to the skillet and cook over moderately high heat until barely white throughout, about 1 minute per side. Add the wine and simmer, shaking the skillet, until the shrimp are cooked, about 30 seconds longer. Using a slotted spoon, transfer the shrimp to a platter. Simmer the pan juices until thickened, about 30 seconds, then pour them over the shrimp and toss to coat. Serve the shrimp with the garlic-almond sauce.
    NOTES One Serving 507 cal, 29 gm fat, 3.5 gm saturated fat, 23 gm carb, 8 gm fiber.

    First thing I see is before subtraction fiber 1/2 c almonds have 14 carbs

      Here's what I get from MasterCook:

      8 cloves garlic (8 carbs/trace fiber)
      2 jalapenos (2 carbs/1g fiber)
      1 large tomato (8 carbs/2g fiber)
      1/2 cup whole almonds (10 carbs/4g fiber) - 2 ounces
      1/4 cup olive oil (0 carbs)
      2 tablespoons red wine vinegar (1 carb)
      1 1/2 pounds shrimp (6 carbs)
      1 teaspoon chili powder (1 carb/1g fiber)
      1/4 cup dry white wine (trace carbs)

      Per recipe: 1667 Calories; 96g Fat; 152g Protein; 37g Carbohydrate; 8g Dietary Fiber; 29g Net Carbs

      Per Serving: 417 Calories; 24g Fat; 38g Protein; 9g Carbohydrate; 2g Dietary Fiber; 7g Net Carbs

          Did you note that LindaSue's MasterCook works out that there are 29 net carbs for the whole recipe and only 7 per serving?

          I'd lean to the MasterCook analysis and assume errors in the cookbook (I've found a LOT of errors in cookbooks and very few in MasterCook).

            Yeah i noticed that. It sounds sssoooo good lol i was at work and couldn't get my head around why it was just by looking at it. I appreciate everyone's help.

            BTW what is this Mastercook thingy?

              MasterCook is a software program that's mainly used for storing your recipes. It has a lot of other features too though, such as analyzing the nutritional counts. Here's their website: http://www.valusoft.com/products/mastercook.html

              They used to have a low carb version of the program but don't go out of your way to get that one. The program is the same and the recipes that come with it aren't really very low carb.

                OHHHHHH lol that's like my Cook'n software woo hoo another recipe thingy!! lol i love those kinds of things even though i can barely cook!
