      ...no kidding ...that sounds wonderful worth building a house around!...I grew up in a house that had a remarkable kitchen the thing I remember likiing the best and mind you this was the 60's was my folks had a built into the wall separate frig and freezer they were side by side and easy to get in and out of ...held a lot of food at a very good eye level...I am not sure what the brand was back then but it was considered state of the art ....I wonder what it would look like to me now?....I would also like a bunch of drawers dedicated to my spice collection ...I have a huge curry drawer now that I keep all the seeds and stuff for making curries it is nice because then my baking stuff is isolated ..this is the first time I have had room to put all my spices anywhere and even now I think it is not the best storage most are still in big jars all over the counter...but the baking stuff is on its own so when I do bake not everything tastes like curry!...anyone have ideas for large scale spice storage beside keeping them in drawers or on the counters...?

        Interesting that you bring this up. I have also been thinking a lot about spice storage, and a thread in a cooking forum I frequent has popped up about the same thing.

        I buy a lot of my spices in bulk from a local co-op (much cheaper than at the grocery store or on-line, generally high quality too) and they come in plastic zip-loc bags, which over time tend to get leaks, which is obviously no good. I have enough space in my pantry now that I might devote a shelf to spices, but am considering other options. Apparently you can buy amber glass pharmaceutical grade jars online for not too much money. Some people are also buying glass top 'jeweler's cases' (little aluminum jars with clear glass tops) and popping lots of spices into empty drawers, so you just pull out the drawer and can look down to see exactly what you have.

        My dream-kitchen is loosely based on the current kitchen in my parents' house, which I helped build several years ago when they renovated. The double-ovens, huge gas range with grill, huge pantries (yes, multiple ones) and granite countertops are all awesome. They also have halogen track lighting underneat the cabinets that sheds lots of light into your work area, which is a nice touch. The flooring is all hardwood (which was original to the house, that was the biggest PITA of a job, to rip out the layer of icky pink 60s formica-ish tile, layer of plywood, layer of tile beneath, layer of asbestos, and another layer of plywood, to actually get to the hardwood beneath) which looks pretty and actually seems fairly functional to a kitchen. For my purposes I might just see what could be done with glazed brick though, as I am a big fan of brick flooring. Then again, my father is a doctor, so money was not really an object for my parents when they re-did theirs. Since I am a teacher, I will likely never be in that position .

          Oh honey my dad is a doctor as well and money always seemed to be an issue with them!!!!....lol...anyway I shop in Canada in Ethnic hoods and the Canadian Superstore...for my flours and spices they are cheap ...whole and very fresh as the turn around is so fast!....I am thinking of a garage pantry because the kitchen is attached to the garage and that is gross because I do not want my car exhaust near my food!!!..so I do not kep the car there at all!....just food ..I want the spices close at hand however so I can be creative on impulse and not have to think things out to far ahead!....pots and pans over my head are not good because I am very short and my DH is very tall...I like them directly under the burners so I can haul them out and up easily they are in sliding shelves and that is about the only cool think about my current kitchen is the cabinets and I will recycle them either into my kids kitchen or my new one...next year!...
