    Re: sorta low carb fudge

Keep posting! Yes, not all members are on Induction...I'm rung 6, but trying valiantly to add back carbs. I never would have thought to use velveeta...amazing what science can do, huh?

I'm still amazed that Heidi didn't know what Velveeta was LOL...it was like, *THE coolest* processed cheese in the 80s...or would Cheez Whiz be the coolest?

If you didn't add carbs into your diet while you were losing weight, you really should re-read the chapters in the book about how to add them. It will give you a more organized way to do it.

Cheez Whiz was like a dip...you put the jar in the microwave and ate it with corn chips fried in hydrogenated oils...what a match, huh? Basically it's like that cheese that comes on nachos...if you can actually call it "cheese."

Oh you could also mix it with chili or something and make dip...but you could do that with Velveeta too, as long as it stayed hot...

It's yummy! Really salty though. It goes great on Ritz crackers...for those non-low carbers.

                    Re: sorta low carb fudge

Okay, this fudge sounds really good (despite how odd Velveeta seems at first glance -- I'm sure it's wonderful as a sub for chocolate texture though). My husband's been really wonderful lately, and we've both climbed the rungs, so I'm making a batch of this.

Wonder if I could make a chocolate and peanut butter batch with this recipe. *ponder* Well, I'll try doing chocolate the first time to see if I like the texture and all before I mess with it.

I'm a peanut butter fiend though.

Thanks, HarleyLady, I'm really excited to try this recipe!

                      Re: sorta low carb fudge

Although I've never made it or eaten it, Velveeta Fudge is apparently a traditional old recipe (not the low carb version). I did a Google search and found this recipe on the Kraft site:

                      Velveeta Fudge

Also, 81 pieces wouldn't be all that small for fudge. If the pan is 9x9", they would be 1x1" squares. When I make real fudge, that's about the size I cut the pieces. Not that I couldn't eat a much larger piece, LOL, but I can get two or more bites from a piece that size since it's very rich.
