  • Holiday ADBB benefit auction: Low Carb Fruitcakes!

    I have pretty much perfected a very yummy low carb fruitcake recipe. If you really love fruitcake and will be missing it this holiday, the bidding starts here.

    I will send a delicious, rich holiday fruitcake loaded with almond meal, WPI, spices, egg yolks, butter, walnuts and jicama "candied fruit" to the three highest bidders. You may specify whether you want the fruitcake aged in brandy or not depending on where you are on OWL. Sorry - the Induction friendly version of this recipe is too perishable and can't be shipped unless you are willing to pay for overnight shipping on ice. If you are on Induction, I can ship you the premixed dry ingredients, a batch of the candied "fruit" and the recipe for an Induction friendly cake to which you can add the perishable ingredients and bake at home.

    All proceeds go to support ADBB. Winning bidder also pays shipping and can specify the shipping method. The regular version of this recipe is dense, compact, and not very perishable so it could be shipped Priority for something like $5-6 to most parts of the United States. I will ship internationally if requested, but obviously it will cost more.

    omg! Naja I love fruitcake...I love it! would it really last if shipped internationally?? I wonder because even shipped through ups priority it still takes about 5 days...

    I would even bid just for the recipe but jicama is not available at all here.

      I am reasonably sure that the OWL version I make is not very perishable, especially if a little brandy is included at the end as a preservative. This is an old fashioned fruitcake, dense and rich with syrup and butter and nuts and spices. For non US folks who win the bidding, I will substitute egg protein for the eggs. I doubt the difference will be very apparent in the taste, and it will remove the only really perishable ingredient in the mix.

      You can also specify the sugar substitute. Malitol does well in this recipe to add texture to the cake, but some people are sensitive to the sugar alcohols so I can use just Splenda.

        I will also do my part to support and place a $20 plus shipping bid, for one of the brandy soaked cakes.

        Does this come with the recipe?

        I am a tad sensitive to Malitol, but not to Xylitol/Erythritol/some of the other sugar alcohols. If it comes down to it though, just use the Malitol to make the recipe come out as well as it can, not like I Am going to be subsisting entirely on fruitcake for the week .

          Yes, though I will actually have to do the baking by eye and measure the ingredients to be able to post or send the recipe.

                Okay, I'm closing the bidding.

                Do you guys want your fruitcakes ASAP before I leave on my holiday trip, or would after the holiday be okay? I think mailing it would be a little safer and faster afterward, but I'm willing to give a shot at delivering for Xmas if it's requested.
