Does anyone have any good low carb Mediterranean recipes out there? I know that they use a lot of olive oil and it's very good for you. The spices are out of this world too. Any suggestions?

My favourite low carb greek food is souvlaki
Can be made with pork, lamb or chicken. My favourite is lamb. I live close to greek town in toronto..we have fabulous greek restaurants here.

When you get to the dairy rung you can have tzatzki sauce with it. it's a garlic/yogurt dip. though I have also made it with sour cream.

I make a very simple marinade of 1 part lemon juice 2 parts olive oil some fresh smashed garlic, dried oregano, salt and fresh cracked pepper to taste ...then marinate anything from feta cheese cubes..to olives ...to kabobs ..chicken lamb or beef..roasted veggies....this marinade is easy to keep on hand and tastes wonderful ....

Mediterranean food also encompasses the foods of Spain, Portugal and southern France. It also includes north African cuisines (Tunisia, Egypt) and coastal Middle Eastern.
So you can use a variety of regional herb and spice blends to enhance your Mediterranean foods.

Kibbe would be good, especially during OWL phase when you can incorporate whole grains into your menu. For the earlier phases of Atkins, you can leave out the bulgur wheat.
Baba ghanoush is found in Lebanese cuisine as well as other Middle Eastern/Mediterranean cuisines. It's Atkins friendly. Substitute toasted sesame oil for the tahini during your Induction phase, because seeds and nuts aren't allowed then. But during OWL Phase, you can use tahini. I got a great hint from someone who said, to add a touch of toasted sesame oil as a flavor enhancer for baba ghanoush and tahini sauce.
Stuffed grape leaves---again, leave out the rice in your meat filling. I would substitute the rice with finely chopped mushrooms or celery/onions in order to keep the filling moist and tender.~Megs~
