  • Baking with soy flour

    Has anyone ever tried baked chicken with soy flour as "breading" on top? Since soy flour is technically already cooked (and so it isn't that great to use for deep frying), I wonder how it works if you are just baking a boneless breast under it or something like that. Anyone use it?

    It will work. Personally, I can't stand the soy taste of soy flour, so I don't use it.

    Other nut flours like almond, pecan or walnut work well too.

      Thanks--I went ahead and tried it on a cordon bleu-type chicken thing tonight and it worked pretty well, though I need a thinner layer of it, or I need to brown it briefly in oil first.
