  • Food Forum Challenge

    Hey if every other Forum can have a Challenge why can't we?

    Last night I was racing through the grocery store (along with others) grabbing supplies for the first snow of the season. As I grabbed stuff in the produce section, I saw a bunch of leeks. Leeks are on the Induction Foods List. Leeks aren't a madly popular veggie like broccoli or spinach. And I haven't had leeks for a long time. So I tossed a bunch into my cart. I'm going to make this recipe from Molly Katzen for Leek Chips http://www.molliekatzen.com/recipes/...dine&print=yes

    So, for this challenge pick a veggie, any veggie from the Induction list you haven't eaten ever or haven't eaten in a long time. Find an Atkins friendly recipe. Make it and report back here.

      I tried the Leek Crisps and they were good!

      I think my oven is a little off in terms of its temperature. So the next time I make these leeks, I'll have to cook them at a lower temp than what the recipe stated.

      Otherwise, they became crispy. Had a good, but not overly, oniony flavor. I think they would make a great topping for the faux cauliflower mashed potatoes recipe or even as a crunchy topping for salads (green salads and stuff like egg or chicken salad.)

          I am gonna choose the sweet dumpling squash so that I can try the Perogie Casserole! Will run around town tomorrow and see if I can find the squash. I so miss my fruit market!

            Are those induction friendly, or are we elaborating (I think we should). I'm trying to think of a veggie I haven't tried. geez, I think I'll eat anything!!

              Hmmm, my squash would be, the casserole, no. You would have to be in the grain rung because it contains the Dreamsfield Lasagna noodles. Great question, will make sure to add that when I come back with the results!

                Ok. I went through the list. The only thing I haven't tried is hearts of palm.
                Now don't all hold your breath, cause first i have to FIND some,. then find a recipe, then make it.....

                      I love hearts of palm. Down here in the south we call it "Swamp Cabbage".

                      It comes canned in the grocery store. I haven't had it canned, but I can only assume as with most vegetables that fresh is much better than the canned. But, at any rate....what we do is start a pan with some cut up bacon and onions. Cook the bacon and the onions together until the onions are translucent. Put the hearts of palm in there (drained) and cook until it is warm (if you're using canned). If, by some chance, you could get your hands on fresh...you cook until the palm gets soft.

                      I'm salivating just thinking about it. Yum yum.

                      Some other people add tomatoes to it. I, however, do not like it that way. Too acidic.

                        I too might try artichoke!

                        I'm going to look for hearts of palm, they sound interesting. what kind of flavour do they have Joy?
