try chicken and green chiles...I toss the whole mess in a dutch oven and bake at about 350 until the chicken is tender
1 hole cut up fryer
1 lb roasted peeled green chiles (or use a 12 oz large can of roasted peeled chopped green chiles....)
2 cups chicken broth
cumin to taste
salt and fresh ground pepper
lots of chopped fresh garlic
on sweet onion diced
you can dump a jar of green salsa in as well or add a few diced jalepenos to spice it up
when it is done serve in bowls with fresh chopped cillantro, a squeeze of lime and a spoon of sour cream....

Here is my recipe:
2 Lbs Ground Beef (any kind except that evil lean stuff, half sirloin and 80/20 works well)
1 or 2 large onions
6 or 7 cloves of garlic, smashed
1 large can diced tomatoes or 2 small cans tomato sauce (no sugar added)
4 or 5 whole jalepenos, chopped
1 can of mushrooms
1 or 2 cans black soybeans
1 can chipotles in adobo
1 can beef stock
1 bottle LC beer
4 tbl extra hot cayenne
2 tbl fresh ground black pepper
2 tbl chili powder
2 tbl cinnamon
2 tbl cocoa powder
2 tbl fresh ground cumin seed (Toasted)
2 tbl oregano
1 tbl old bay seasoning
1 tbl mustard powder
10 or so toasted fresh ground chiles de arbol
1 tbl ground clove
1 tbl garlic powder
1 tbl onion powder
1 tsp ground ginger
1 tsp nutmeg
1 tsp allspice
1 tsp celery salt
1 tsp ground carraway seed
worcestshire sauce, several hearty shakes
soy sauce, ditto
LC BBQ sauce, ditto
vinegar, ditto
bourbon, ditto
extra salt to taste
whatever else I see around the cupboard that looks like it might be a tasty addition.
Brown the onions and garlic in some oil or butter, toss in the beef, brown it, add all the spices and liquids along with everything else, simmer on low heat for a couple hours.
Serve it up with fresh chopped raw onion, lots of ripped up cilantro, lots of sour cream, a mound of melted jack or cheddar cheese, and some pickled jalepenos on top.

It's a bit of a blend of cincinnatti style and regular old texas chili. More spice than the sweet cincinnatti stuff, but a lot more depth of flavor and more sweetness than a traditional bowl of red. It gets sort of dark murkey brown from all the spice, but I like it. It does tend to run through you pretty fast if you aren't used to eating a lot of spicey stuff though.Originally posted by nurseladyNullo you must have been high when you came up with that chile!!! LOL.....I copied it by the way!!!...

it sounds great! mine is a bit easier!!!! for red chile.....or you can make red chile and green chile sauce and serve things "Christmas" style like they do in Santa Fe with half and half!!!!Originally posted by NulloModoIt's a bit of a blend of cincinnatti style and regular old texas chili. I make my authentic Santa Fe style Chile with
1/4 cup NM red chile ground
1 tsp ground cumin (optional)
1 whole onion diced
3 cloves garlic
above in enough oil or lard to cover bottom and saute :icondance the onions and garlic then add the chile toast it a bit and add a quart of chicken, beef or veggie stock (or to be real New Mexican) add water bring to a boil and simmer for 15 min you can then add shredded pot roast, chicken, or pork ...or make it veggie and only add pinto beans no other bean is allowed!
