  • No bake cookies..whaddya think?

    Soem of you are familiar with the oatmeal based "no baked cookies". I learned to make them in home economics back in junior high and we called them "raggedy robins" or "fudgies" .

    Anyhow, here's general, regular carb recipe for them...

    No bake cookies
    2 cups granulated sugar
    1/2 cup evaporated milk
    2 tablespoons cocoa
    4 tablespoons peanut butter
    1 teaspoon vanilla extract
    2 1/2 cups quick-cooking oats

    Combine sugar, milk, cocoa, and peanut butter in a medium saucepan. Bring to a boil over medium heat, stirring constantly; boil for 1 minute. Remove from heat; stir in vanilla. Add oatmeal and stir to blend thoroughly.

    Drop by teaspoonfuls onto waxed paper.
    Of course the sugar can be substituted with one of the sugar substitutes and the milk with cream.

    What would happen if I sub unsweetened flaked coconut for all or part of the oats?

    Less fat and flavour ..... and a little bit dry ... maybe ..... but you´ll never know if you don´t try ensive

            the oatmeal sucks up some of the fluid and becomes a little gummy and when they "set it dries as a glue to hold it together sort of like flower and water paste.

            you could press your stuff into a pan. cook it and cut it as bars but it will be more like a fudge then a cookie.

                  you can use any nut butter you like or grind your own. you might try adding some flax for glue or some whey PP too let us know how they turn out.

                      I'm hesistant about adding flax, because I'm afraid they'll become slimy-gooey. But adding something like xanthum gum might not be too bad. The coconut is dessicated, so it should soak up some of the liquid too...

                      My worry is that the replacement of sugar for sucralose might change the texture. In the original recipe, the chocolate-peanut butter mixture was boiled for 1 minute, from what I remember the texture changed from something liquid-like to something more syrupy and sucralose won't give me that syrupy texture....Unless I add more peanut butter to act as a glue.

                        go crazy try it with out the gum or anything ...you can freeze it if all else fails ...I hope I can get to the point of not getting sick from nuts! :sadblinky

                          first are you going to cook down the cream like when you make creamed spinach as a evaporated milk replacemnt? if soi that should thicken it up a bit. I make pudding from whey and flax so it will not get slimey

                              2big, the recipe I used in junior high and other recipes I've found don't use evaporated milk, but the regular white stuff in a carton. I think the recipe above uses evaporated milk for "richness" of flavor more than a texture ingredient.

                              With the original recipe, the oatmeal gave a "dry" but chewy texture to the cookies. Maybe if I use a coconut-wheat bran mix that would duplicate the texture of the original cookies.....
