  • Bacon grease...can we use it?

    I always put my bacon grease into a jar and throw it in the garbage rather than down the sink...

    today I fried some pork jowl bacon and there was so much fat!

    I wonder if I could use it to make a vinaigrette with it and pour it on spinach salad and fry brussell sprouts and so on...

    would this be a good thing or bad?

    Bacon grease is TERRIFIC to use if you're cooking any type of veggie. It adds wonderful flavor. I like to sautee catfish or herrings in it too.

    If you want to make a salad dressing using bacon grease, it'll have to be one of those "hot dressings" for wilted salads. Heat a couple of tablespoons of the bacon grease, add a minced garlic clove, fry only for 1 minute. Add a tablespoon of vinegar or lemon juice, pepper, herbs of your choice, heat until it almost comes to a boil. Then pour it over your salad greens, Mix until the greens are semi-wilted. They should be soft, but still crunchy. I like to use a sturdy greens like romaine lettuce, endive, arugula, raddichio and I like to top the salad with a poached or fried egg. If you have bacon pieces handy, toss that on top too along with lots of freshly grated black pepper. :yummy

    (I think I know what I'll have as a side dish for my seafood soup tonight!)

      In fact, I just made hot bacon dressing on spinach salad, and it was great! Of course, having the big hunks of bacon on the salad was nice as well! I go the recipe from the Food Network -- BUT it was way too vinegary! I added double the amount of Dijon mustand and two packets of splenda (if you check that one out!). And then it was fine -- so be sure to take a little taste first to make sure you like it before tossing your spinach in it. Oh yeah, we sprinkled some feta cheese on the salad as well -- Frankly a gorgonzola or chevre would have been better, but didn't have those!

        Yum, I never thought of hot bacon dressing- I love that in restaurants! Gotta give it a try!!
