  • Breakfast on the go?

    Hi

    Long time since i have been here. I lost 72 lbs a year ago on atkins and have now gained back 20. after these holidays its back on it, but i want to do it right this time

    I work, travel, have kids and the hardest part for me and atkins is that most of the time you have to cook the food, you can't swing thru 7-11 and pick up a steak etc

    that being said, lunch's and dinners are the easiest for me, but i leave early and cannot cook before i go. i had come down to nasty frozen omellete's EVERYDAY, and can't take it anymore

    are there some good recipes here about cooking breakfast items the night before and refrigerating etc that i can heat up and take with me??

    phase 1??

    i would truly appreciate it

    ps - way back in the day there was one recipe that you put eggs, and some other stuff in cupcake pans?? something like that and cooked them?? looking for anything i can eat in the car, if that makes sense

    There are tuna/salmon muffins. I personally love them with salmon.

    Have you ever made like rollups with smoked salmon and cream cheese the night before and eaten them? or with meat/cheese?

      Eggbake. I make up a batch and chow on that for breakfast.

      Very simple....

      Use left over meats or cooked sausage and spread it in a 13x9x2 spayed with Pam(whatever spray you want) pan. Spread over the meat whatever veggie you like in the morning, for me it's spinach, onions, zucchini, tomatoes, chilis, etc. Beat up 12 eggs and add salt and pepper to them then pour over the meat/veggie mixture. Cut up a bar of cream cheese into 12 pieces (more if you think they are too thick of pieces) and place them all over the top of the egg mix. Bake at 375 for about 20 minutes or until the middle is firm and set. Eat right away or cool, cut into 12 slices and put in a covered container. Reheat one or two slices for 30-45 seconds, respectively. See, just easy.

      I've also made up chicken salad with slices of veggies and cheese in a container the night before to grab and chow on the way to work. Whatever you can put in a container or ziploc bag and go usually works.

        is it good for phase 1? just asking cause that's what i am starting next week.

          Yep, that recipe is good as gold for any level of Atkins...with or without meat (beef/pork/elk/deer...sausage, steak, bacon, etc.). It's all about what you want to put in the recipe that makes it unique and good. The more veggies you put in it, the better (I think) because that means you're getting your supply of fiber and vitamins early in the day for more energy and carbs to keep you going. And just an added bonus, I've made the same recipe in muffin tins/papers before, but it's just easier and less of a hassle to clean up to use the baking dish instead. You can use just about any baking dish you got. Just make sure you adjust the times and watch for the middle to be done. I've made it in so many different types of pans that I've found the 9x13 works best for me.

            very nice, this is exactly what i was looking for. with so little time and me not the best cook anyway i think this will do the trick instead of those awful frozen omelets i was eating everyday for phase 1

              When you move up OWL you will have more options. I sometimes do protein shakes because I can run out the door with them and I have made flax/almond flour muffins that are easy to grab and go with.

                I got this from a post someone made on ! My husband (who doesn't eat low-carb) and I thoroughly enjoy this (it's similar to Lisa's recipe). Yummy!

                From the recipe below I do 1/2 cup of red peppers and 1/2 cup of green peppers and omit the scallions. You could probably add whatever veggies you'd like. The heavy cream is optional, too. I usually spray the pan with Pam or something similar and then line it with parchment paper (NOT waxed paper) for super easy cleanup! We use sharp cheddar rather than pizza cheese, but it's only preference.

                At BJ's they sell a very large roll of jimmy dean sausage, 32 oz raw. Brown that up in a pan. While that's browning beat 18 eggs, chop 1/2 cup red peppers, 1/2 cup scallions and I added 2 tbsp heavy cream, add to the eggs. When the sausage is done put it into a 13 x 9 pan which is already sprayed with pam. Pour the egg mixture over the sausage. Sprinkle with 2 cups shredded pizza cheese. I cooked it @ 350 for about 45 minutes, until a knife comes out clean in the center. When it cools cut it into 8 slices. The slices are pretty big so I ended up cutting them into 16 slices and put 2 each (1/8 pan) into ziploc bags. They went crazy for them this morning! They said they hope they weren't to much trouble to make because they wanted me to make them all the time. The carbs wren't bad either.
                1 32 oz roll sausage 12
                18 eggs 10.8
                1/2 cup red peppers 2.3
                1/2 cup scallion 2
                2 tbsp heavy cream 2 ( I don't know if that little made a difference in the taste)
                2 cups cheese 8
                Total 37.1 / 8 = 4.6 carbs per 1/8 pan
                you can put whatever veg's you want in there, just make sure you count the different carbs.

                    I am not a morning person and it is hard for me to get up and make breakfast before I go to work. I am usually just not hungry until later in the morning. So the night before, I make a breakfast chicken salad and when I walk out the door I grab my breakfast container and lunch stuff. I eat when I get to my desk in the morning. I drink a bottled water on my 30 minute commute. Sometimes, I bring a bag of bacon and much on it during my drive.

                      The one thing that I have learned about the diet is that you have to break the "standard American diet". What that means is you can do WHATEVER you want for meal planning. You can have dinner for breakfast. Lunch for dinner. Breakfast for dinner (my personal favorite). What you can do is make extra dinner food and reheat it for breakfast for those days you are in a hurry.

                      One of my favorite time savers is this:
                      turn on the deep fryer for 375.
                      go do something else for 10 minutes or so
                      deep fry some bacon
                      remove before bacon is fully cooked.
                      turn off the deep fryer and run out the door.

                      Actual prep time, <1 minute
                      cook time approx <3 minutes
                      time enjoying bacon eternity

                      Another quick idea
                      eggnog
                      3 pasturized eggs
                      1/4 cup of heavy cream
                      splenda to taste (1 tablespoon)
                      pinch of salt
                      nutmeg/cinnamon

                      combine all ingredients with stick blender for 2 minutes
