    Hey guys! I am having a cooking day, since I have a lot of food in the fridge that is going to go bad if I don't use it up.

    Anyway, I was making Scotch Eggs out of some old sausage I had, and was pitying myself about not being able to bread them... when my wandering eyes came to rest on the pork rinds... HELLO!!!!! Wrapped the puppies up, coated them in the crushed rinds, and popped them into the oven. My goodness, they were good.

    Also, If you haven't tried the fried cheese taco shells, I definitely reccomend those as well. Mmmmm... cheesey and crunchy! I was able to eat right alongside my family last night. I can't beleive I can find so many good things to eat that are low carb.

      I was SO happy when I discovered this Atkin's secret! I made these pancakes on my first Atkin's journey. They taste like french toast and have zero carbs, as far as I can tell. I didn't even need the low carb syrup. They were great plain.



      Low-Carb Pancakes (Pork Rinds)

      (1 serving)

      2 eggs
      1/4 cup heavy cream
      1/2 of a 3-oz bag of unflavored pork rinds
      3 packets of Splenda (or other sugar alternative)
      1/2 teaspoon cinnamon
      1 dash nutmeg
      Crumble pork rinds until they resemble bread crumbs.

      In a seperate bowl, beat eggs until frothy then add remaining ingredients and continue to beat until well mixed. Add pork rinds to the egg/cream mixture and set aside for 5 minutes to allow batter to thicken.

      Cook on a lightly greased skillet as you would any pancake recipe. Drop batter on surface large spoonfulls. Cook until each side is lightly browned.

      Serve with butter and a low-carb store bought syrup. Or for an interesting low-carb topping, mix 1 Tablespoon of sugar-free jam with 1 and 1/2 Tablespoons water and microwave for 45 seconds.

        Carbquick Crepes are quite yummy! I used davinci ButterRum SF flavoring in it, and on it, and ohh my my my. There is a whole new side to cooking low carb, and yes I can live this way!
