    After seeing the Barbacoa recipe in the Main atkins forum http://www.atkinsdietbulletinboard.c...ic.php?t=71984 , and since the Forum Hostess is in Texas right now, I did a google search of some Texas recipes, alot look pretty atkins friendly. Here are a few I've found (sorry no carb counts, you'll have to do that yourself ;-) ) I haven't tried any of these yet, but if anyone does, please let us know how they turn out!

    Texas Steak with Beer Butter sauce

    Think I may try this one first!

    Jalepeno Pie

    Not sure what you would eat this with? but it sounds like an appetizer kinda thing maybe?

    Texas BBQ Beef Ribs


    Tex Mex Devilled Eggs


    Texas Smothered Steak

    This has 1/2 c of flour but i think would probably be fine without it

    Texas Hot Peanuts

    YUM Sadie, those all sound delicious!

    Isn't the internet a great almost unlimited source of recipes! I could search all day! :joy

      I had to stop myself last night at 11:30 or i'd be up searching all night! I've got so many recipes off the net now i've got enought dinners for a year!

        LOL, I had to bring home an old 3 ring binder from work for mine! Its one of those w/ the 4 inch spine and its full, I think I have enough for the rest of my life! :geek

          Hmmm I am thinking this could be done with jicama or cauliflower!!

            You know barb i'm a huge b'fast person too and I printed that one thinking it would probably work with cauliflower!

            i wish i could find Jicama around here, my grocery store had it for a while, but i haven't seen it since dec. they tell me it's out of season guess it's not worth shipping up (i think i was the only one buying it LOL)

              Or radishes! I posted a recipe a while back for home fries made with radishes believe it or not.

                Hey Thanks for that link Mog! I am not a huge radish fan, but I may just try that and give radishes another try. Did you ever make them?

                  Hey barb, I didn't even think of radishes! I have made them in the past..I have sauteed them in butter, and though I coudln't get them to go 'crunchy' they do lose their heat (and colour they become pink) but they're really good! Though they take forever to dice up cause of their size!

                  maybe if you put salt on them and left them in a strainer that may pull alot of the water out of them and make them easier to brown.

                  They'd probably work great with this recipe.

                    I haven't tried it yet. I'm planting radish seeds this weekend though and will be trying them in a few weeks. A few folks on the board have made them and said they were good. John used to not like radishes either, he gave them another try and said to me "I wonder why I used to not like them, I like them now" So you should try them again I think.

                        thing I like about planting radishes is that they only take 26 days from seed to the salad! I like to plant a few and then a week later plant a few more etc etc, then you have fresh radishes all summer instead of a truck load of them all at once that end up going bad! I'm glad I could be an inspiration! :geek

                          Try a Diakon radish if you hate cutting all those small ones, looks like a huge white carrot, works great for "hashbrowns." Easy to dice or shred!

                            Oh I bought one of those Daikon radishes a while ago. Didn't like that at all. Then I remembered I didnt' like radishes LOL.

                              IMO they taste different than our little red ones barbiedoll so still give them a try, I also think the Daikon's smell stronger. Although I do like them I can understand you not liking them :yes
