Peel it and slice it thin like potato chips and fry them---like potato chips.

I have the instructions around here somewhere for pumpkin chips---it will work for butternut squash too.

Isn't butternut squash quite high in carbs? My mother had given me one a few weeks ago but I gave it to my sister, thinking it was a little too high in carbs. Oh well..live and learn. ensive

Butternut is a winter squash, so yes, higher in carbs than other ones, and an OWL food. As far as what to do with it, it makes for great french fries.

When you can eat one, peel it, chop it into fries, blanch in 250 degree oil for like 5 to 10 minutes, leave drain on paper towels and place in the fridge overnight uncovered to let some moisture out, then deep fry in 350+ degree oil till crispy. Tastes even better than potato fries.
