So, I wrote this in my journal earlier today:
And I figured I should post it here too! Who knew sorting out my menu each day would be this satisfying...
I find it particularly useful to keep track of my menus, and reflect on them, how they make me feel, etc etc, in my personal journal, so I figure I'll do it here too!
Today's Eats-
Breakfast - "Mock French Toast"
- 1 egg
- 1/4 cup egg whites
- 1 packet Splenda
- 1/4 tsp cinnamon
- 1 tbsp Atkins syrup
Lunch
- Leftover Stuffed Peppers from last night! Which were delicious, btw!
- 2 cups romaine
- 1/2 oz Asiago
- 1 hardboiled egg, sliced
- 2 tbsp Renee's Ranch Dressing
- 1.75 oz cucumber
Snack
- 2 Pepperettes
- 1.8 oz Bocconcini Cheese, and
- 1.5 oz grape tomatoes, tossed with
- 1 tsp Olive Oil, and
- pinch of salt and oregano
Dinner
- Sirloin (Yum!)
- Asparagus, coated with some Olive Oil, salt, pepper, and wrapped (the entire bunch) with two pieces of bacon
That brings me to 14 net carbs, 1473 calories, and 65%/4%/31%.
This morning was my first go at the Mock French Toast, and it really hit the spot, as I was so not in the mood for scrambled eggs, which is my usual preferred fare. It tasted just like real French Toast!
And the Stuffed Peppers last night were such a hit with the husband! Definitely making those again.
Jeez, I could talk food and nutrition all day, me thinks.
