  • Induction Lunch! Chicken BLT Bowl

    1 grilled chicken breast (~8oz.) cut into bite sized cubes
    1 cup romaine - chopped into small pieces
    1 roma or plum tomato (about 1/2 cup) diced
    5-6 slices bacon, cooked & crumbled
    2 tbsp. mayo (more or less depending on preference)
    salt & pepper to taste

    Prepare all ingredients as listed, then combine in a bowl. Pretty simple, eh?

    I only use 1 cup of lettuce so it doesn't feel like a salad. It's a meat salad, really, with a little bit of veggies. It's good hot or cold, so it's a really great thing to prepare in advance for a quick lunch on the go. Throw it in tupperware and bring a plastic fork, and voila!
