  • Main Dish Layered Salad to the Max

    With summer coming up, my family doesn't like to eat heavy meals, especially at noon. I feed 7 employees each day at noon, and have to have something that everyone will like. Here's what I came up with today. It was terrific, and nothing was left.

    1 bag lettuce - Used Romaine blend
    1 layer of broccoli flowerets
    1 layer of ham cut up into small pieces
    1 layer of pepperoni
    1 layer of leftover chicken breast cut up into small pieces
    1 layer of hard boiled eggs
    1 layer of cheddar cheese
    1 layer of mayo sprinkled with a couple of packets of Splenda
    1 layer of parmesan cheese
    top with a few bacon bits (homemade)

    It took care of the whole farm crew, and nobody complained. In fact, I even got compliments.
    June Goals
    1. Continue with water
    2. Use bike more (3x per week would be nice).
    3. Continue with videos.
    4. Go to the YMCA for water classes.
    5. Build stamina for more walking.


    Goals for May:
    1. Water every day - at least 100 oz.
    2. Walk through Wal Mart instead of ride.
    3. Post every day.
    4. Get the exercise bike out of basement and use it!
    5. Re-read DANDR! It's been too long.
