I adapted the recipe from http://www.otherwhitemeat.com/aspx/r...id=692&cid=2so that I could stuff pork chops. The whole family loved these. It looks like a lot of steps, but it's really easy.
8 boneless pork loin chops (mine were about 3/4 inch thick)
1/4 cup chopped onion
1 teaspoon minced garlic
3 medium to large mushrooms
1 tablespoon olive oil
8 ounces of frozen chopped spinach, thawed, well drained
6 slices bacon, cooked well done, drained and crumbled - reserve drippings
1/4 cup grated Parmesan cheese
1 tablespoon Dijon mustard
a good shot of onion powder
1 teaspoon dried basil (I used 1 tablespoon fresh basil)
1/4 teaspoon pepper
1/4 stick butter
1. Pound pork chops until they are about 1/4 inch thick.
2. Cook onion and garlic in hot oil until tender, remove from heat.
3. Press well-drained spinach between several sheets of paper towels to remove moisture. Put in bowl.
4. Add onion mixture, crumbled bacon, Parmesan cheese, mustard, basil and pepper. Mix well.
5. Spread spinach mixture on pork chops. Roll up and tie with a string.
6. Melt butter with the reserved bacon grease. Brown pork rolls over medium heat until nicely browned.
7. Remove string and serve.
Resist the temptation to season the pork chops. They don't need it.
