  • Chicken Florentine

this is delicious. I purchased all the ingredients at TRADER JOES, those of you from the southwest USA will recognize, but I think it is adaptable with other foods. prep time with food purchased as described is about ten minutes

one package Just Chicken (pre cooked 1.5 pounds roasted skinless boneless chicken, in the cold food section)

one package garlic and spice cheese spread (spiced whipped cream cheese type dish i believe an 8 oz tub) (8 carbs per package)

one bag frozen chopped spinach (if i read my carb counter right, net 3 carbs for the bag) (3 carbs)

one quarter cup minced onion 2.75 carbs

    2 cloves garlic (2 carbs)

    1tbls fresh basil (.02 carbs)

chop up chicken into bite size pieces.

saute garlic, onion and basil until soft in about 2 tbls olive oil.

add chicken, which is cooked and saute until warm.

throw entire bag of spinach on top (sans plastic ) and put a lid over the pan until the spinach thaws and warms.

stir this all up and then add entire tub of cheese spread (bit of mushing and stirring needed while cheese melts down)

it is really delicious and this recipe will make 4 servings, although i've bene known to eat half by myself, haha.

Please correct me if I am wrong but I believe a conservative calculation of carbs is 17 for the total dish.

PS, TJ"s also has these nifty flash frozen cubes of crushed garlic and crushed basil about the size of a bouillon cube ( i used these, one cube basil two cubes garlic) very very handy and very good.

THe cost for the chicken, spinach and cheese totaled 9 bucks, the garlic and basil cubes less than 0.10 each.

    Bon Appetit!! :joy
